The use of Mustard has been a VERY controversial in relationship to Allergy and Listing of the item in recipes and the disclosure under Federal Health Acts ETC. Examination of Recipes received for Kentucky Beef, which was a Company started by KFC Corporation and Brown/Massey have disclosed Mustard was NOT being listed ON ANY recipes. BUT Mustard was being used in MANY recipes in the USA with NO listing of it on ingredient list. Mustard was being used in many recipes in the Kentucky Beef. Mustard was being used as a basting and a ingredient added to eggs and milk. Mustard was mixed with Milk & Egg This Mustard was shown to be used. [/url]

In the recipes I have reviewed the mustard was used as a rub to hold seasoning on Beef roast, and the second recipe the mustard was mixed with Milk / Egg Salt/pepper and whisked for a Dip prior to rolling and pressing the items into the seasoned flour.
I can also re-call that in 1974 the News Paper
Waverly Root concluded that the chicken was "dunked in some sort of batter" containing flour, milk, and perhaps egg. Root was certain only of salt and pepper in the seasoning; he guessed that celery salt, caraway, chili powder, and/or horseradish might be present
Horseradish being similar to rooted or hard items like Ginger, Nutmeg, ETC could have been grated fine and added like fresh ginger ETC.
We have used Dried Horseradish, dried Worchester powders for every.
The horseradish is added to Hamburger recipes we have made for ever also and NO-ONE has ever said OH there is horseradish in the hamburger but we sell thousands and its a top requested item.
Margret Sanders did reference that the milk / egg wash contain salt/pepper ORIGINALY. I know that Cream of Tarter, and Vanilla were added to the Milk/Egg mix. The Milk and Egg warsh was to be refrigerated when not in use.
If you watch TEF the Chicken was soaking in the Milk and Egg Warsh it was NOT just a quick 5 second dip.
The Original KFC was always Pre-dusted with seasoned flour before placed in the Milk/Egg Warsh. It allowed the areas that the skin was missing or loose to have a coating that would stick to the bare chicken, and not leave open areas of chicken with NO coating Deep Fried. ANYONE who knows how to Deep Fry Fish knows there is NO skin like chicken its the first Pre-Flour that makes the Batter stick

Bottom line: Was Mustard Seed in KFC_OR?
I'm trying to decide if I should swap out Celery Seed and swap in Mustard Seed.

Caraway seed was used But do not remove the celery seed
Caraway seed was used more in the 1930's then mustard.
Celery Seed is needed in the KFC and more Celery 6% to 8%
the Caraway Seed should be on a low end amount of spices at 4% of total spice amount
