I have been asked numerous times regarding KFC color
The Original KfC OR Pre Brown & Massey was a Reddish Color or Rose Color. It was Coin phrased a Golden Brown after.
This was one thing CHS was very upset about and caused the one lawsuit and when CHS said that the New Age Corporation changed the recipe.
One of the Big differences as Time evolved that CHS did not have to contend with as much as the New Age Corporation was the change with the cooking Fat, Lard and then Oil.
Anyone who cooks with Beef Tallow, Lard, compared to Hydronated Vegetable Oil knows there is a big difference in: Heat retention, Smoke Point, Taste, and ability to filter the used items.

The Big problem in a fast pace restaurant with open fryer for French Fries and Pressure Cookers for Chicken ETC is the cleaning and filtering the Oils and the COST.
ANYONE who has done this at a commercial level knows its a Pain in the Bucket ? The changing of Oils alone now are $75.00 and the disposal for the Oils are a extra charge.
Current Canadian prices for a Block of Lard are $70.00 wholesale and Oils for 20 Liters at KFC Corporate Price can average $ 26.00 or average of $5.00 to $6.00 per Liter. cost
so when you break down the Cost of Oil Per Day it can be $50.00 a Day if your cycling the cooking Oil Change cycle on the Machines. Even if your using High recovery Open Deep Fryers they need to be changed on a 3 day cycle and should be Filtered Daily. Part of the reason Citric Acid is used is to help stabilize the Oils.
Cracklin Makes the Best Gravy and always has BUT many think its a Bad thing, BUT the French can scrap the bottom of a Skillet and deglaze it with wine and it's acceptable ?
Oil at a commercial level is one of the ugliest jobs for staff to work with. Anyone who has done the Job knows what I'm saying and it's Not like doing it at home but even at home its a Pain.
