I will be sharing more of the information just received.
CHS gave a interview about flavored Flour ?
butter is melted and when melted Vanilla extract is added to the Butter.
the combination of butter and vanilla is then dripped onto flour and mixed into the flour. The balls are left to dry and then sifted into the Flour.
Also Fresh Herbs, Thyme, Sage, Parsley, Chives. are chopped up and mixed into the flour when the items dry they are sifted into the flour.
Sweet Items liquid, Syrup, corn syrup, Honey can also be dripped into the flour and dried and sifted. spreading into the flour evenly
Also Oils and Fat can be dripped into the flour where balls form and then sifted into the flour. When the flour is cooked it creates bubbles and pockets.
if you review the New Age KFC they are adding oils to all the recipes ?

So in addition to the content within the infamous 26 ounce bag, the very flour itself contains spices, butter, vanilla, and potentially other ingredients. If so, that would be pure genius.

It was done with CHS recipes in the First restaurant. He commented that there was No other people doing this method.
Many people rubbed butter into the Flour for the biscuits but CHS was doing it with many other recipes

Sifting the Four was ONE OF CHS MAJOR MUST there was NO exceptions.
when CHS mixed the Spices and Flour he sifted it and sifted it.
The flour was ONLY used with 3 batches of chicken and sifted 3 times and a NEW batch of flour was to be used. Any left over flour was used for the Gravy Rue.
THERE WAS NO EXCEPTIONS and flour was only used over a MAX 2 day time period. If flour was mixed in the afternoon it had to be used by the next afternoon, or it was changed and used for the Gravy. There were occasions CHS tasted the Flour and sifted it then ADDED more spice and told the cooks they need to make sure the Flour was seasoned. He trained the cooks to know what it should taste like and make sure it was seasoned.
the flour needed to be a fluffy light flour not a heavy weighted packed flour the spices do not mix into dense flour.
There were occasions when cooking the chicken was floured and set aside and fresh pepper and salt was sprinkled over the resting chicken, or spices were sprinkled over the chicken.

When you observe youtube videos of the inside workings of KFC restaurants, sifting is never observed or to my knowledge discussed. Unless I've simply overlooked it, which is entirely possible.

if you look at other Videos that show Chicken Breading Stations for sale they show the method in detail which is the same as KFC

This is the exact same as KFC uses for sifting flour just different brand
we use our sifter ALL the time its critical to use
