Buttermilk brine with salt...submerge the chicken...put in refrig. For a few hours
3 cups of flour,
1 tablespoon ginger,
2 tablespoon ground black pepper,
1 tablespoons celery salt,
1 tablespoons baking powder,
1 tablespoon granulated garlic,
1 tablespoon Italian seasoning,
6 tablespoons buttermilk in a separate bowl Start your dredge 1 1/2 quarts oil heated to 350 degrees Put chicken skin side down, put lid on cook 5 minutes, rotate pot 180 degrees, cook another 5 minutes, turn chicken over, cook 8 minutes with top off check temperature. White meat 160 degrees...dark 170 degrees. Remove chicken...let set 10 minutes

he does make a Crispy Style chicken but its because he let the Flour Dry to the chicken also and Baking Powder makes it crispy
Stay away from The Baking Powder, or Corn Starch at a heavy amount they all make a crispy chicken which NEW AGE KFC loves

I agree! I added 15 grams of cornstarch to 185 grams of All Purpose Flour, and it made the open deep fried chicken noticeably darker, plus it was even more crispy, which is the opposite of what I'm after. My daughters first comment was "This is way darker than the previous batch, and is getting away from how KFC looks!".

The Temp has to be Low to help keep the color from over dark.
Remember KFC New Age Corporation also uses warmers after they pull the chicken out of the Fryers.
The color should be set in the First 3 minutes the cooking Sear / Browning / Toasting what ever we want to call it. The inner cooking is the low slow time after the Searing time.
The original 11 Herb n Spice was red and the oil turned red very quick back in the original days BUT they did not have the filtering like we do now even when the New Age Corporation used a Original Herb and Spice turned the oil red. If they would have filtered more often like other Pressure cookers suggest it would have helped BUT it does use more oil. Keep this in mind Just because KFC New Age Corporation is NOT using the Red Spices with the Red pigment it DOES NOT mean they are NOT using the Essential Oil Flavor enhancer in the oils and in the Seasoning and flour

Listen to what they Do season the New oil with the Chicken Back.
also he says when he worked at KFC they used 50Lbs Blocks of Lard, KFC used 50Lbs Beef Fat in the original Days
