I like his chicken, but there are easier ways. Take the chicken straight from the brine and lightly bread the chicken. Then drop the chicken into your wash. Take from wash and use the usual KFC turns and presses, then fry. If you dip too much heavily floured chicken into the wash, the wash becomes batter like. To me this wastes flour.

My wife is 100% fully happy to bread deep fried chicken with only Flour, Celery Salt, and Pepper. Or occasionally with ground Corn Flakes or 'Special K' instead of flour. And I'll admit that this approach indeed satisfies, though I'd also like to toss in some MSG. I believe that my wife thinks my effort to pursue the elusive KFC 'note' is crazy. Or perhaps more directly that it indicates that I'm going crazy. And my kids (adults as they are) are likely right there with her in this assessment.
