Brine 1) 2 Cups of Water 2) 4 Tsp of Salt 3) 3/4 Tsp of MSG
Egg Wash 1) 2 Cups of Skim Milk 2) 1 Egg
Spice Mix Mix with 2 Tsp of Salt, 2 Tsp of Sugar, 1/8 Tsp of Garlic Powder, 1/4 Tsp of Onion Powder, 3/4 Tsp of Turmeric, 3/4 Tsp of Paprika, 2 Tsp of MSG, and 2 Cups of White Flour 1) 2 Tsp of Tellicherry Black Pepper 2) 1 3/4 Tsp of White Pepper 3) 1/4 Tsp of Chili Powder 4) 3/4 Tsp of Cumin 5) 1/4 Tsp of Marjoram 6) 3/8 Tsp of Celery Salt 7) 1/8 Tsp of Cayenne Pepper 8) 3/4 Tsp of Tarragon 9) 3/4 Tsp of Sage 10) 3/4 Tsp of Savory 11) 3/8 Tsp of Ground Ginger

I would make 2 MIXES and flip the amounts of white pepper and black pepper so you can see the repesentation of 1 with higher white pepper and one with higher black pepper

So white pepper is greater in amount? Then how about 2 tsp of black pepper and 3 tsp of white pepper? I think that's enough salt since I'm brining my chicken in a mixture of salt and msg for 24 hours.

There are some countries which have the Black Pepper volume higher then the White Pepper

Claudia said that the very first chicken they made were Salt & Black Pepper, with numerous different combinations of spices which CHS has confirmed.
The ultimate change for higher White Pepper was when many items were rationed and there was very limited amounts of Black Pepper BUT the White Pepper was NOT a item that was not rationed like Black Pepper and other spices.
The time period matches with many Recipes from the similar time period and you see many recipes where the Salt and Pepper were BOTH in Teaspoons NOT Tablespoons, IF you view OLD recipes Salt & Pepper was Typically measured with a Tablespoon, while other spices were measured with Teaspoons.
Yes its true that the Mental Tins were Made and Patent with 3 openings on the Top of the Lids Like current ones in use today. one side flips open and has shaker holds / Middle opens and fits a Teaspoon with the lid acting as a level for the teaspoon / opposite end opens for Pouring out amount at slower rate with smaller opening then Middle.
