The overage is salt. 13 grams may still be the weight of the H&S.

1 part herbs & spices (and presumably salt) plus 5 parts flour = 6 parts total.
Therefore:
1) If flour is 200 grams, then 6/5 x 200 = 240 grams total weight
2) 40 grams is the weight of the H&S, plus MSG, plus Salt.
3) If H&S plus MSG = 13 grams, then Salt = 27 grams, such that 13 grams plus 27 grams = 40 grams
Conclusion: Indeed it does appear that MSG pus H&S = 13 grams
4) If we then presume MSG at 3.5 grams, H&S = 9.5 grams
This all seems very mainstream normal to me.

I see that Item does NOT ship to Canada. the was a Kentucky Chicken coating that was available to Canada which had Flavor and was Similar to the KFC Yes, the item is in Australia only unfortunately.

The above is NOT Chicken obviously BUT CHS Soaked the CHICKEN in the Milk n Egg Warsh
By soaking the Chicken in the Milk n Egg warsh it helped with a time saving when your in a Busy Commercial Kitchen you just Grabbed the Dipped Chicken and Flour Pressed it and One step was saved in making a Egg n Milk Dip when your busy.
The Milk n Egg Chicken marinade needed to stay in the fridge. BUT pre-flour chicken that was placed into the Milk n Egg Warsh also had a cooked crust that was like the Original KFC from 1950's 1960's 1970's before the Powdered Egg and Milk change by Brown and Massey

I think Guga added about 4 times too much baking soda to his egg marinade for the steaks.
My wife just bought a shaker of McCormick's bromelain (which I believe is papaya enzyme) meat tenderizer. We have not tried it yet. It is a blend of bromelain in dextrose (corn/maize sugar). I like a bit of dextrose in our KFC_Like chicken coatings, but I don't know how that will translate to steaks. The driver behind this is that we purchased a front quarter of grass fed beef, and we have been disappointed in the toughness of (particularly) the Rib Steaks.

Pineapple is by far the Best short time marinade for Beef 35 - 45 Minutes. NO Longer
Papaya is a very close second many have said, personally never used it have stuck to the pineapple as it a old family thing and you don't mess with old tradition.
have tried some commercial powder meat tenderizer. when the pineapple was not available at finger tips or ran out of it always keep a Plan Package B available.
