As I have mentioned before, the more MSG you add, the more sugar you are effectively adding to your flour. Add to your personal satisfaction (within reason).

If the above 10X Recipe is added at 16 grams to 200 grams of cake flour plus 26 grams of salt (instead of adding it at 13.05 grams), it will make 8 batches instead of 10, and it will be the quasi-equivalent of the 32 ounce bag, plus it will be the equivalent of the proverbial "Zinging".

Thinking I will do up some wings on Monday or Tuesday. I have calibrated and made some small changes to my last recipe using the leftover mix. I have kept track of what that would mean to a new recipe.
Really it's chasing the ratio of Ginger, Coriander and Sage to each other. I'm fairly settled on the rest of the ingredients and amounts.

Here we thought you discovered the secret and went underground! I wish that was the case! I learned how painful it is not having internet. Mind you that we haven't had a television in our house for the past 22 years, and that we are still at the level of the flip-phone, so without internet a poorly functioning AM/FM radio was the only connection we had to the outside world. Book reading was our solace...

For my planned cook tomorrow I don't really have a recipe to post. It is a mashup to be honest in an attempt to use up some leftover mix and flour. At the basis it is the last cook with more sage, ginger and pepper plus add savory back. In the event this is the best damn chicken ever. I have calculated all the ratios of the added ingredients against the leftover mix and seasoned flour. Meaning I could get back quickly to where I am.
The theory with this is; what if Sage, ginger and coriander where all 1g in our normal 200g recipe. As well as what does a higher pepper amount do.
All to say. I don't expect to make ground. But do hope to clear the contents of some bags and air tight containers.

Positive results in the "leftover" recipe. Real good smell when cooking. Good undertones of what you'd expect. I'll have a better idea with the actual leftovers tomorrow. Both cold and reheated as always.
Top of my head:
More than enough flavor comes out of the ratio of flour to mix that I'm using. I had 18g into 200g but only 12g of that was H&S. A bit hard to nail the percentage 100% as I added ingredients to the leftover mix. And then mixed that with the right amount of flour. Then the leftover flour together with the new batch. I did the math but still room for error.
I feel like it may be a tad better with a touch more pepper and a touch less other H&S. But the leftovers will tell the story.
All in all a really nice batch of chicken.
Should mention I marinated again same as before but this time didn't include garlic.

Leftovers were very good. I'll have to reverse back to what may become my last recipe with my ingredients of choice.
After which I am gonna try a few experiments. Looking forward to playing with some of the spice packages I have found and bought lately
