After the disaster of my last recipe, as caused by my placing of so many turns in the road that was initially on the path to success, I've stepped back to an only slight derivation from my recipe before last that tasted so wonderful, sans for being a wee tad too salty, and a wee tad overbearing either in cinnamon or in nutmeg flavor (depending upon whether I'm listening to my wife or my daughter), tweaking only that which needed to be tweaked, and presto, the potential for getting back onto the road to fried chicken Nirvana now looks like this:

My Suggestions as followed - EVERY recipe that cooked Meats in the 1930's usually contained Fresh Onion & Garlic. Some had Garlic as a optional item BUT Onion seemed to be a Staple and either a Medium or a Large Onion
190 g. Cake Flour + 5g. Dextrose + 5g. Maltodextrin 28.5g. Bakers Salt (almost flour like consistency) 15.0g. MSG (Accent, or Aji-No-Moto) 3.00g. Fine Ground White Pepper 1.10g. Fine Ground Black Pepper 1.10g. Coarse Ground Black Pepper (do not grind) 0.60g. Ground Allspice 0.60g. Ground Coriander 0.55g. Ground Ginger 0.50g. Ground Celery Seeds 0.40g. Chili Powder 0.40g. Ground Sage 0.35g. Ground Thyme 0.30g. Ground Savory 0.25g. Ground Marjoram 0.20g. Ground Dried Orange Zest 0.20g Ground Garlic Powder 0.20g Ground Onion Powder
Only a suggestion to Add Garlic & Onion Powder. I Only put 20g in this sample Recipe for the Garlic and Onion.
I also dropped the chili to 40g from 45g and Bumped up the Celery to 50g from 45g

Thanks! I know that KFC has garlic in it, but I'm not sure if there is onion.

KFC Original had BOTH onion and Garlic AKA Vegetable Seasoning on OR Bags
Celery is a Vegetable seasoning
Vegetable flakes are important as a replacer to many items and is a combination seasoning.

I think there is more then 1 item which creates the NOTE Both Star Anise, and All spice both have great NOTE With this in mind, perhaps instead of adding Allspice at around 0.60 grams, I should consider adding Allspice at 0.30 grams and Star Anise at 0.30 grams. What are your thoughts on this deepfriednew101?

I use Star Anise ALL the time and I would definitely mix both
I personally Prefer the Star Anise and like it.
Allspice is what more people have seem to use.
Remember KFC has said people will be shock at some items in the 11 Herbs and Spices
use both

So your thought is instead of the popular Star Anise + Clove. Use Star Anise + Allspice?
If so, I find that interesting because that would account for those that taste cinnamon and/or nutmeg and clove and may fit better in the recipe weight wise.

I am planning on trying my Anise Seed as well in a recipe. Star Anise and Anise Seed compare well, one is a little more potent but that can be accounted for. Reading back it seems you were to use Star Anise in foods where you planned on removing it before serving. If it was meant to stay in the recipe, you used Anise Seed. Both could have been used over time.
