I am thinking of the concept of making a gravy out of my mixture to sample flavor. If I don't have cracklings, how would you recommend I do this as to not overly change the flavor. Not end up with something stronger or weaker much in flavor as to what would be on the chicken. I understand deep frying changes the profile of the spices. But a good tasting gravy should make a good tasting chicken coating in general.

you can Make a Rue with the seasoned Flour and Butter. once you have made you Rue add your liquids and then add a little more of the 11 Herbs and Spices to taste.

I find spices Like women at a Bar? They Look Great On the outside and the more wobbly pops you consume the better they get. Then when you get them home and peel back the layers of glitter and Ribbons, It may never have been what you expected? I guess women say the same about men on the internet the package was not as described?
some of the Name Brand Spice have not lived up to expectations when cooking and testing. There has been many times alternative brands have been better. It always left to the availability, cost and then what do you do with the substandard Jar or Tin?
Moral of the Spice Jars and Tins if its not what you want have another drink until it is what you expected.

After watching 'Glen and Friends KFC Episode #10' YouTube video yet again, I thought about placing Savory in the catbird seat and eliminating Allspice altogether thereby, just as had been done for the mysterious recipe from Glen's Canadian friend. But presuming that the 'Glen & Friends' recipes are potentially short on ingredients, I came up with this one. Let me know what you think of it please.

As you can see, by adding Clove and Nutmeg at the tail end, I put back two of the three flavors of Allspice, leaving behind the Cinnamon flavor. That plus I added some Cayenne Pepper for a bit of spark and to account for the red stuff and capsicum detected (albeit minimally) for 99-X in a recent chemical analysis of it. Perhaps my 0.30 grams of Cayenne are a factor of about 2 on the high side. HMMMM ?
