deepfriednew101, that recipe would have (among similar issues for the other ingredients) 13.23g. of white pepper and 62.27 grams of salt being added to 200 grams of flour. That seems way off.

Found it. Episode #7. Seems way off on quantities as presented. Sums to 740 grams. 48 grams to 100 grams of flour would be 96 grams to 200 grams of flour.

When total white/black pepper gets above ~5.5 - 6.0 grams in 200 grams of flour it gets to be excessive. And if cayenne or Chili Powder or the like is also being added, then white/black pepper should be somewhat reduced.
13.23 grams of white pepper and 8.56 grams of black pepper added to 200 grams of flour is going to rock your socks with heat.

I kind of think that if I do decide to experiment with more than 13g of H&S to 200g of flour. I would most likely stick with the same ingredient list and say add the 13g of H&S to 100g of flour. So double the ratio and see what that does.
For a wild side experiment I would keep the pepper(s) in that 5-6g range, leave extra salt, and garlic and onion the same. And increase the rest of the ingredients by 50% across the board.

I think it was Episode 7. It would be easy to match as I copied the recipe from Glen's Message Board LOL.
I agree that when you hit high volumes of Salt or Pepper it can Over-power all other spice amounts
Glen has NOT been the ONLY person who tested that Recipe it has been tested by other internet bloggers and In there comment forums and views all say similar reviews.
I leave it to everyone view and objective taste of the chicken.

Three items that were used By CHS and Claudia. Vanilla Extract was used in Baking and French Toast. Birds Eye Custard Powder was used in recipes. Dream Whip Dessert Powder was also used.
The Custard and Dream Whip were substituted items in the Flour. Many used it to create a forum of cake flour when added with other items?
Its all what was used when other items were not available KFC New Age Corporation used the Custard and Dream Whip Powder to replace Milk n Egg Powder. In some countries Milk and Chicken are NOT mixed for Believes and Religious customs. Many felt the Taste was changed to much when they started trying these 2 substitute's and other items. The problem is that the attempts were 1/2 hearted and rushed in the beginning and they were NOT refined before the Damage was done. The problem that the NEW AGE CORPORATION had was NO CHS to explain the method he used. CHS also stopped giving them advice on changes as HE was so made they changed the 11 Herbs and Spices. So any help with Flour was NOT given by CHS.

I can't believe that anyone would tolerate 62 grams of salt added to 200 grams of flour. Many complain when I mention that I like 28 to 30 grams of salt in 200 grams of flour. They call 28 to 30 grams excessive.

I think quality of the ingredients will have a lot to do with how much of the H&S needs to go into the flour. Same for how much of each is needed in the mix.
The only thing for me that would make the 13g into 200g need to bump way up is if in the 26oz spice bags there is a lot of concentrates being used. Which could be the case so it's not 26 oz of real H&S. It's a combination of some H&S with fillers and a bunch of concentrates to drive the flavor profile higher than the weight on the bag would seem to indicate. Probably the case.
If the above has merit, then perhaps start thinking of it this way. Get your blend of H&S to 13g for 200g flour and then add to your comfort level the MSG. For my recipe I'm cooking tomorrow, I would have an extra 3g of space to added back to the "11".
I'll try to pay more attention to is there enough flavor more so than is there not enough of 1 thing or too much of 1 thing.
