I use Potato Starch as a was to make the coating more fluffy and lighter then using straight flour.
I typical replace 20% of the flour for a potato starch in my recipes and for simple match I just use 3/4 cup flour 1/4 cup potato starch.
some people say that the potato starch is more expensive then flour which is true
I have also used instant mashed potato in flour as a potato starch as a replacer to potato starch
I guess there are other possible options for a fluffy coating its what I use some people say Whey can also do this but I have not tried much Whey typically maybe other who use it can teach me the use of Whey
