I've been using about 2 parts Sage to 1 part Summer Savory (by weight measure, not by volume measure). What flavor change might I expect if I reversed this?

I find the Savory has more peppery depth flavor it has more kick then the Sage
If you wanted a more rebus depth flavor the Savory can be higher then the Sage amount
But I would NOT go 2 parts of Savory to 1 Part Sage
60% Savory to 40% Sage or 20% more is a high amount more for Savory.

That is also fine to do both at the same amounts
also add a Onion Powder ( Garlic & Onion ) were always added as a Tag Team in the 1930's

I would do that typically turmeric is more color and not flavor
