Might there be any benefit in substituting fine milled corn flour for about 8% - 10% of the wheat flour for the chicken coating?
For 200 grams of flour and using 9% this would mean:
18 grams of fine milled Corn Flour 182 grams of Cake Flour
Note: Corn Flour is not Cornmeal.

The Original was a Tri Blend of Flour before 1950'5 this was due to most Flour which was called AP Flour was made from:
Wheat, Barely, Corn mix
The current KFC usually list a corn in the flour?
I personally think the Corn added to the flour has made a better coating. mixing it at a 10% ratio has never causes a side effect to the worse.
Some information disclosed was that n the early Pre 1950's the flour was 60% Wheat, 20% Barely, 20% Corn that was in a document disclosed by the Military that the war rations of wheat which was a mixture stated above was always in demand
