Garlic and Garlic extract were items CHS did mention in recipes - Garlic Extract was what he mentioned ? What was Garlic Extract in the 1930 to 1960's Garlic Powder ? Garlic infused ethanol (Ethyl-Alcohol) or Oil would be my guess. But it's only a guess. Vanilla Extract is Vanilla saturated ethanol.

How much Garlic Powder is too much for a recipe built upon 200 grams of flour? Is 0.55 grams too much? I'm thinking of adding 5 grams of Garlic Salt. 5.00 x 0.11 = 0.55 grams of Garlic Powder. 5.00 x 0.89 = 4.45 grams of Salt

How much Garlic Powder is too much for a recipe built upon 200 grams of flour? Is 0.55 grams too much? I'm thinking of adding 5 grams of Garlic Salt. 5.00 x 0.11 = 0.55 grams of Garlic Powder. 5.00 x 0.89 = 4.45 grams of Salt I use 1 gram per 200 grams of flour. Would not go lower.

I have been at 0.25g into 200g flour. I feel I could go more say 0.5g. I am not as brave as @11serbs. I feel at that level it would overpower other ingredients in my recipe. However that depends on the amount of the other ingredients you use.

"If you want something you never had, you have to do something you've never done." I have mentioned it a few times before. Garlic is super important. This amount is not overpowering, trust me. You could probably go even higher, this is not the upper limit. It will only elevate the other herbs & spices. Take your best recipe to date and increase the garlic as described. Be brave

dehydrated garlic
Fresh chicken. Breaded in: wheat flour, salt, monosodium glutamate, spices, dehydrated garlic, modified milk ingredients, dried egg white (egg white, baker’s yeast, citric acid). Cooked in: canola oil (dimethylpolysiloxane (antifoaming agent), TBHQ). Contains wheat, milk and egg.

the Pre-Ground will have lost some potency.
My recommendation is Purchasing the Dehydrated which should be cheaper and Pulse Grind the Pieces into powder requirements you desire.
All of our Spices we are NOW purchasing as Dehydrated and Mill on our own and the Comments are OFF the Charts what have we done to get such flavor.
THE ONLY difference is using Dehydrated items milled to our preference.
MAJOR difference in TASTE
we just catered 2 events one with 125 people and one with 240 People and the remarks for the Food were some of the HIGHEST we have Had and PERSONALLY All of the cooks and Myself ALL said the difference is NO COMPARISON to the Pre-powdered
ONLY our observation and result.

Original Recipe® Chicken Ingredient around the world Have listed Dehydrated Garlic for 40 Years that I can recall. Yes garlic Powder was available on the Markets since the 1930's many old Tins or Bottles are sold in Antique Auctions everywhere. Hope this answers question for some people who have sent private messages regarding the Garlic issue from my opinion. some old Photo's of Vintage 1930 Vegetable Tin or Bottle
