The Biggest question in the Last while has been the Question THE NOTE or THE AROMA
The Biggest source of Aroma or Note from KFC comes from a multiple of Items BUT the Biggest is the Pepper and this has been THE BIGGEST ISSUE for KFC since the Corporation took over.
Please Read the Following ONE Paragraph when Bill Sommers from Marion-Kay was asked to recreate the 11 Herbs and Spices THE
Mr. Summers explained to me when spreading out the spice mixture the Colonel had given him several spices immediately stood out for identification. A few others he had to give some thought and study. The one ingredient that Mr. Summers felt won the Colonel over was the superior black pepper that was available to Mr. Summers. Mr. Summers called the pepper the “Tellicherry Pepper”. He told me the pepper was probably what the Colonel had used originally. Mr. Summers said the ingredients had slightly changed probably due to availability. He said there wasn’t enough Tella-Cherry Pepper in the whole world to supply a major chain like Kentucky Fried Chicken.
That is the ONE Biggest Printed statement that was told BUT KFC also admitted in 1973 that they had to have the Winston Group Collamatic Group to help with the Pepper situation they were having.
In The CMT Todd Wilbur Video it was mentioned Tellicherry Black Pepper.
BUT White Pepper also has a More distinctive Smell then the Black Pepper on a different Level.
When I was ON a different Forum. I was telling Everyone WHITE pepper and 2 Different Grinds of Black Pepper. BUT if YOU review the messages I also said ON many POST Red Pepper & Cayenne Blend which was a 1930's Item that was DISCONTINUED.
IF you VIEW the Gloria P Video on DONAHUE from 1980 and 1993 SHE does NOT use BLACK PEPPER or WHITE PEPPER. she used 2 Distinctive items Lipton's Cup a soup Tomato Soup, Or Lipton Cream of Soup with Paprika OR KNORR Tomato and Basil Soup. THE SECOND item was the GOOD ITALIAN salad Mix
She CLEARLY states that the Goods Italian seasoning Gives almost ALL the items in the Original KFC BUT NOT ALL she also says that the SOUP mix has a item that is needed and the Tomato gives the Red Color that the ORIGINAL chicken had before the CORPORATION took over and DOHANHUE mentions the SOFTER crust that was replaced with the CRUNCHY crust.
NOW the CUP of SOUP CREAM and TOMATO and also the KNORR contained NUTRICINAL YEAST, Milk Powder, in both for flavor and thickening agent, and WHITE PEPPER, and MSG.
THE aroma comes from the Pepper and the YEAST plus SAGE, ONION, GARLIC, MACE.
Remember the OIL creates a AROMA when Deep Frying just thing about Deep Frying in your OWN kitchen and the SMELL after you are DONE the GREASE SMELL. it is there for 2 Days if you don't AIR it out?
KFC OIL has so much spice in it from COOKING its a permanent waffling aroma. BUT KFC of the 2021 ERA can make Cardboard in FIRELOGS smell like KFC chicken and Finger Nail Polish Smell Like KFC. I'm SHOCKED that KFC has NOT approached TROJAN with a Lip SMACKING 11 Herb and Spice condom idea?
Beef Tallow had a more Powerful smell then most oils except Oil used for Pop Corn making in a Theater. The other high OIL AROMA a MINI DONUT truck at a fair.
WHEN many people Talk about a Great Steak or a Great hamburger from a Flat Top Grille or Skillet you hear them talk about seasoning the Grille or Skillet the Flavor.
Its the seasoning in the Pan. I will maintain that you CANNOT use NEW oil and get a KFC taste strong aroma or taste until multiple cooking in the OIL, or by mixing some old oil with fresh oil to help speed up the process.
THE other Day I was going to cooking on the out door BBQ and ONLY heating the BBQ up NO food and the NEIGHBOR said what are you cooking that smells GREAT what are you cooking. I said " AIR "
The current KFC are using FLAVOR enhancer in the KFC which includes OILS and COMPOUNDS to spike the Taste and Smell. They just call it natural flavoring. Look and most reverse engineered studies they always say OIL of ? ? ?
