Hello all, I'd like to first of all thank everyone on this forum. I have been a silent reader for quite some time now and have benefitted a lot from you guys. I came across a vendour in the UK called Jolly Chef that is selling a seasoning called 99X -X. Interestingly, they even refer to Marion Kay in the description BUT unlike the latter, they do reveal the entire list of ingredients. I haven't tried the mix yet as I just discovered it myself, but it looks very promising to me. I reckon we have all been using most of the spices listed, but many still seem to be hesitant about using cinnamon and cardamom in particular. Here are the ingredients and ratios: Ingredient List/Composition SPICES (Black pepper powder, Cracked black pepper, Ground black pepper, white pepper, Ginger, Garlic, Corriander, Cardamom, Thyme, Sage, Cinnamon, Clove, Pimento, FLAVOUR ENHANCER E621)
1. Mix a 90g sachet with between 1kg and 1.5kg of flour, depending on your taste. 2. Mix between 100g to 150g of salt to the spice and flour mixture and mix well.

Per Wikipedia:
It seems to me that 'potentially' the "Cinnamon, Clove, Pimento" portion of the OP's listed ingredients could all be replaced by Allspice.

I have made reference before to some things CHS made reference about seasoning
Pumpkin Spice Mix
• 3 Tbsp. ground cinnamon • 2 tsp. ground ginger • 2 tsp. ground nutmeg • 1 ½ tsp. ground allspice • 1 ½ tsp. ground cloves
(produces about 1/3 c. of spice blend)
The Spice Mix Pumpkin Pie Spice Mix contains these ingredient's it may NOT be a exact mix but has the items list
CHS spoke about taking some spices from other seasoning and making a seasoning needed. He also said he took spices from other things like stuffing and Sausage etc. When CHS and Bill S from Marion-Kay both spoke at the Marion-Kay Christmas Party, The issue that Marion-Kay had the Best Cinnamon and Ginger. Just after he said that 99x uses the Purest Spices was a Slap in the face to KFC Corporation who used Pumpkin Spice Blend of NOT pure spices for the KFC chicken.
Bill S when commissioned to make the Original 11 Herbs and Spices was given a Bag of the Corporate KFC mix and Bill S pored it into a plate and started to view it and smell it. He determined that they were using NOT pure spices and that some of the Items were NOT the same as the PURE spices in 1935 time Era
Bill S Knew KFC Corporation changed the Pepper and were not using Tellicherry Pepper. He also knew the substituted Cinnamon for Cassia bark as there was a shortage of Cinnamon. ( SO KFC was NOT only making cost cutting methods there was shortages of Spices in that time period it was a necessity of survival for the company)
In 1973 the Biggest struggle faced by the Winston Group who was trying to help KFC and the Colectomatic Engineers develop spices were spice shortages in the 1970's and Pepper, Cinnamon were both a issue Saigon Cinnamon was not imported to the USA because of War issue and embargo's. There was NOT enough Tellicherry Black Pepper for the KFC demand and what really screwed KFC was that Bill S secured the contract for ALL the import of Tellicherry Black Pepper.
Ginger was not as big of a situation but the 1935 Ginger was a Higher Quality that was imported compared to the stuff being made in the USA that was being used, and the other BIG BIG situation was that the original COLD steal cut and Rolled or Rubbed method for processing spices was being and had being changed with high speed grinders that lost much of the Oils from the spices. ALSO the manufactures were also Harvesting the Oils from many spices for essential oils and still sold the lower grade spices.
The 1910 Food Acts were very STRICT with PURE SPICES and it started with the Pepper Trade situation as Black Pepper was a VALUABLE community Prior to 1900. There was much smuggling of Silver to trade for BLACK PEPPER and the traders were mixing lots of poor spices with Black Pepper to gain weight for Black Pepper and there were many Fines issue in 1920 over the Black Spice issue.
NOW in 2021 many of the spices are PURE because the method of growing spices has increased. BUT there are still poor spices etc. you just need to test the spices.
The List of spices the company listed in there is very similar to the Spices Glen Disclosed in the Video's

If we count the black pepper as one ingredient, we’d even have 11 + MSG. I can confirm that Pimento is indeed allspice, but I don’t think it would replace cinnamon in any way. I know this is what you get to read about allspice a lot, but I never had any type of allspice that would actually have a cinnamony taste or impact on the finished product. It would honestly be the first item I would ditch when you already use cinnamon and clove. Anyone here that has tried cardamom?

Apparently (if internet sourced rumors are valid, which is always a massive "if") due to a lawsuit levied upon it at some juncture 99-X was forced to change their original formula. The potential (and this is purely guess work level hypothetical speculation) exists that to facilitate the change they removed Allspice and replaced it with some of its essential character/flavor contribution spices, plus they renamed a diminished Allspice to Pimento.

This would explain why they list black pepper powder AND ground black pepper. There is absolutely no difference, at least not in the UK. This way they can surely avoid the 11.

There are many items which substitute Cinnamon like: Cassia, All spice, Cardamom, Nutmeg, Mace, Ground Cloves, Ginger, Anise, and even Vanilla Bean. But Pumpkin Spice Blend was the most common as it was a blend of most of the groupings and cheaper because its not a pure spice.
This is why when many people tasted certain items in KFC like Vanilla Bean or Anise it was the Blend of spices when Cinnamon was a shortage.
The best substitute is Cassia it is used in almost 95% of candy flavor for Cinnamon taste and Lathe drinks.
The MK lawsuit forced MK to use NO MORE then 5 individual ingredients. Not including Salt, Pepper, and MSG
MSG was the official 12 item in KFC added in 1955 the 2 Handfuls Elements CHS admitted in Canada that he had the 11 Herbs and Spices already in 1939. It had been On Radio interviews since 1978 That he added 2 handfuls of a ELEMNET not a Spice or Herb.
Salt & Pepper were NOT considered a Spice in 1935 they were 2 essential Items in every house hold.
just because you grind Black pepper 3 ways You Do NOT count it 3 times as a spice.

Where in the Marion Kay lawsuit is it specified that they were to be restricted to 5 ingredients? This is speculation based upon a different lawsuit settlement that didn't involve Marion Kay.
