over-all its in a descending order many have used the Bottom 3 can be juggled around
Salt is your highest amount followed by the Pepper's
coriander and onion are the highest spices following pepper's
some people have lowered Garlic down lower
The spices amount may depend ON YOUR BRAND as some can be more potent then others.
everything is a little juggle to your preference and your spices.
when I'm running out of spices which to me MEANS when my spice Tubs at at 50% or just under I purchase New Spice and top it up and the new spice sifting ALL the the spices together that way you have a more consistent spice taste.
I learned that from the master of spices. CHS said never use ALL the spice you have in the Barrels before you start a new Barrel combine a new Barrel with a 1/2 used Barrel keeps consistency flow. I bet there are particles of spice in my drums that are 30 years old blended with new spice. remember the spices mix together and keep getting new flavors.
When covid hit and spices ran out it caused a major issue with some spices as the quality was much lower then years earlier, to the point we have had to buy 2 or 3 different Brands of same spice and blend them together to bring the Quality up.
when you have no choice you do what you have to.
CHS was a MASTER of substitution of spices BUT he blended to similar spices together and added others to make it similar. CHS taught Brown and Massey what TO DO it was NOT all about cost cutting that caused spice changes. BUT once they saw the cost savings they started trying to cut all the high cost items down with other items or cheaper items. Then came extracts.
CHS was using extracts in 1935 Long before KFC corporation. It has been printed in many documents he provided that he used extracts
