Someone has finally cracked the vials of 11 herbs and spices (Coriander, Savory, Garlic Powder, Sage, Cloves, Ground Ginger, White Pepper, Allspice, Thyme, Ground Red Pepper, Tellicherry Black Pepper) but what's unknown is the measurement of each. Does anyone have that information?

The real trick seems to be in getting the weights of each spice plus MSG dialed in for 200 grams of flour. That's where I'm struggling. Mine never tastes as salty as KFC. And the last I tried was 32 grams salt (with no garlic salt) and 5 grams of MSG.
So far, as to pepper, I've either been hitting low or high, so I should be zoning in on the pepper.

I wonder if the reason why my fried chicken efforts to date have tasted as if they are nowhere near the salt level of KFC is because I have not been brineing my chicken in water with a good load of added salt and MSG? So far the highest I've gone with salt has been 32 grams added to 200 grams of flour, along with my highest MSG being 5 grams in 200 grams of flour. At this juncture I almost feel as if matching the salt level (for the case of no Salt/MSG brineing) may require perhaps as much as 40 grams of salt.
As an aside, I've been adding straight garlic powder. If I switched this over to garlic salt, would it be fair to presume garlic salt as being about 3/4 salt and 1/4 garlic powder?
