During experiment, I initially doubted that white pepper was the predominant ingredient. However, after many trials and errors, I found there were multiple types of white pepper. The real secret ingredient of the original recipe chicken is Sarawak white pepper. It has a slightly yellowish tint and a lot more specks compared with other white peppers. It also has a very different taste so it cannot be replaced. Using other white peppers would produce a completely different product and the result would be gross.

I tried Mccormick and it was terrible. It had too much heat, fermented and earthy taste, and lacked citrusy or licorice notes. Munkok was better although did not beat Sarawak

His first comment was the spices and herbs in 1939 were MUCH MORE pure and high grade.
Back in 1939 ONE only needs to view the Internal revenue trade import documents to see that there was PRIMARY only TWO types of WHITE PEPER imported into the USA yes there was small amounts of other white pepper trickled in BUT no real volume and it was imported to the opposite end of the country.
Then crossed with the Pepper shortage that KFC spoke about as a issue in there Bulletin's its easy to cross reference that Sarawak White Pepper is and was the Most common packaged White Pepper in 1939 sold in Kentucky or the area.
You need to Understand that FRESH Black Pepper is a KEY blended properly.
Red Pepper was a item which is overlooked as a item to be used
Red Pepper of 1939 is not Pink peppercorns of 2024.
Cayenne is NOT Red Pepper
