I use all except mace. From what I've read, mace dissipates quickly in hot oil. I overdid mace once (the first time I ever used it) and I got a quite noticeable mace/nuttiness overload from it, so rest assured, it doesn't all dissipate. Yet another advantage of a top down approach to ingredients revealing definite limits, wherein opposed to this, approaching H&S (etc.) timidly as for a bottom up approach may never reveal anything, and is inclined to lead to frustration and abandonment rather than valuable discovery. Edit: Another way to look at this is to fully accept that in order to get where you want to go one must first know where they are. But timid and inconsequential additions may never reveal where you are. And as a consequence leave you lost.

I find it Funny that on the OLD forum and TC32 experiments Going back Decades and decades
Originally Many spoke about the Red Hue the Chicken Had and Thousand agree with Gloria P Donahue show also and the TV shows she was on all compared the chicken she cooked while speaking about the red hues.
The chicken in Canada and USA Had Visual of herbs and Pepper It was spoke about on the wayback forum also. Photo's were shown of many examples for a long long time
You may have been in a area which milled spices smaller for KFC
If I'm not mistaken Willie has mentioned that Herbs were visual on old memories (if I'm mistake please Willie please accept apology for mistake)

I again will state my Point the Coriander was NOT a readily available item in 1939 as a Individual item sold by the Spice Companies.
Marion Kay Bill S indicated it was a Late spice to the Trade of Spices arriving Mostly after the War (yes there was Coriander Seed Prior to War BUT it was Hard to get)

KFC has always presented the illusion that their chicken was covered with pepper specks. I remember visible specks, but I can't swear that they were pepper, herb or both. I posted some photos of old KFC, but I'm not sure which forum I posted them on. I'll post them here, to be sure.
Just looked and those photos have disappeared from my Imgur account.

I have posted to many photo of the old chicken also
I know the color and the Herb visual and we have OLD KFC cooking color charts from the 1970's that were on the walls to use for the Browning uncap time of 2 - 3 minutes depending on chicken volume piece count
