Silver's sugar free breakfast sausage. I've been refining this recipe for some time now. 1 Pound of Fatty Ground Pork [we use Aldi 1 Lb. ground pork packages] 1 TBSP Lard
1-1/2 TSP Rubbed Sage 1-1/8 TSP Table Salt 1⁄2 TSP Black Pepper 1⁄3 TSP Pizza Pepper Flakes [just round over moderately on a 1/4 TSP measure] 1⁄4 TSP Thyme 1⁄4 TSP Allspice (or use my Allspice Substitute) 1/4 TSP Rosemary 1/4 TSP Fennel Seed 1/5 TSP Pink Salt (Prague Powder #1) [just go a wee bit shy on a 1/4 TSP measure]
Add everything except Pork and Lard to a Mortar and Pestle, and grind plus blend it all together well. Work into the Pork plus Lard really well by hand (fingers). Sprinkle it across the pork a little at a time and incorporate it really well. Repeat until it's all been added and it's all been worked in really well and distributed evenly. Enjoy.
