16.0 grams Nutmeg 16.0 grams Mace 9.10 grams Clove 3.40 grams Cassia Cinnamon 1.00 gram Black Pepper
Fills a standard 1.6 ounce (45.4 gram) spice bottle.
When added at 1 gram it delivers: -------------------------------------------- 0.352 grams Nutmeg 0.352 grams Mace 0.200 grams Clove 0.075 grams Cassia Cinnamon 0.022 grams Pepper
Instructions: Combine and grind. Fill a 1.6 ounce spice bottle. Use 1:1 by weight as a direct replacement for Allspice.
NOTE: Clove has 5 times more Eugenol by weight than does Allspice. So 1 gram of this blend delivers precisely the Eugenol punch as for 1 gram of Allspice.

I like your blend. This blend added to Ledington's would be much better than the one I used. What I used was too "aromatic", probably because I used too much. I kept to the 20% herbs, 13% ginger and 10% spices. Just too much spice. I can still make adjustments, but I think I'll go back to the series I was working on before my wife died.

My Allspice Substitute is being simplified to look like this:
16.0 grams Nutmeg 16.0 grams Mace 10.0 grams Clove 3.50 grams Cassia Cinnamon
Fits a 1.6 ounce Allspice bottle perfectly. Use 1:1 by weight as if it was actual Allspice. Then report as to whether:
1) You can't tell the difference in recipes. 2) You prefer it to actual Allspice in recipes. 3) You are not satisfied with it, and prefer actual Allspice. 4) Something else.
