Hi guys,
I'm finding that white pepper in my trials are not matching completely. The flavour is too strong even with small proportions.
What variety are you trying? (Mine is standard from the supermarket so I don't know the variety)

There are only a few different types of white pepper as the white pepper is just how long husks are saturated and when harvested from peppers work with your amounts you use for the intensity. If the white pepper you purchased is fresh it can be very powerful. Best way to test your white pepper strength is in mashed potatoes to see how strong the white pepper is ?
Make mashed potatoes divide the potatoes into 2 portions mix one portion with black pepper to taste and then in the second batch mix the same amount of white pepper and see how hot it is. keep some extra potatoes to dilute the potato down if you find it to peppery
Don't get to concerned on the brand of white pepper right now figure out how strong it is. There are some white pepper I mix at a 2 part to 1 part Black pepper and other 3 to 1 ration

There are some white pepper I mix at a 2 part to 1 part Black pepper and other 3 to 1 ration I don't know why ,but the taste is over all other spices, in my case it should be 10% from black pepper proportion or it eats all the other flavours. All the recipes i try have the same problem. Regards!

Cut your white pepper back to where you have a acceptable level balance. There are some spice which are more powerful then others. Balance the flavors even if it does not make sense with any recipe or way people are making it forget what some say its what your using and it could be more powerful then other white pepper.
