So then WHY question the Validity of Marinade or Brine
You even acknowledged YOU have a OLD MANUAL ?
You continually maintained You never had a Box of Salt or the Flour ?
But you have seasoning, Marinade, and Manuals I Do Not recall about the Milk and egg powder.
If you want Boxes of Salt or milk and egg powder will gladly give it to You.

I have 1998 stuff, which places it into your "New Age" category. According to you, we should question anything done by New Age KFC. I have a box of salt, and a fellow gave me 5 lbs of KFC flour. Prove I ever said I didn't have these items. I got the salt and flour years after I got the 1998 stuff. What's your point?

I researched it and discovered that the mix not only salts the meat, but also causes it to retain moisture more efficiently. My manual says if you marinade beyond the recommended time, which I believe is 10 minutes, then the chicken would be too salty. My take is that visible packaged salt was reduced to appease the public, but was reintroduced, clandestinely, to bring the salt back up. This is corroboration that salt is critical. Also, the chicken has gotten bland because the high amount of salt could no longer be kept secret, so it was reduced. KFC chicken has become woke. Pretty simple, now isn't it? Most start with little salt and increase, until a family member (woke) complains and the salt equation is dropped. I did it different. I started high, and then came down to match my target taste. Also, my wife has been gone for nearly 6 years now.
