Jamaican KFC
Upon a Last Visit recently to Jamaica where Numerous KFC Franchise were visited and Viewed
The Original Chicken and the Other Varieties are Different and the Types of chicken cooked are different Than other countries.
When We opened the KFC Original Seasoning Bags It was Easily NOTED that Pimento was a large make up of the BLACK spec's in the Bags Mixed with Black Pepper.
IT WAS EASY to tell from the Aroma of the Bag when Opened and the Seasoning is MUCH MORE of a PUNCH that Canada and the USA.
There is a 1000% difference in the Full Flavor and taste also IT HAS TRUE FLAVOR
NOT like Canada and the USA which is Most salt and peppers sage and cooks more like diluted Flour when NOT properly continually sifted.
Samples of the Jamaican Seasoning were obtained to compare with Canadian and USA and visited Multiple Spice companies while on the trip
Canadian Original Seasoning from Two other countries were ON hand to compare seasoning of the 3 Different Countries and THEY were ALL Different
The Flavor profile and When cooked were ALL 3 Different and after many testing with multiple People from different Countries
The USA and Canada Fell FLAT on there cooking and EVERYONE 100% did NOT want to re test the USA or the Canadian BUT wanted the Jamaican KFC.
While we Tested the Items Of Seasoning from the Different Countries Time was taken to Test
Grace's Perfect blend and 99-x and they were Cooked in the SAME Commercial Pressure Cookers as ALL the Other Chicken.
THEY all failed like the Other County compared to the Jamaican KFC.
In a later Posting more comparison will Be Compared.
We also Test Cooked THE Recipe which was hand written BY C.H.S. and Mixed with Jamacia Grown Spices Locally sourced The Recipe was Cooked following the EXACT measurement as Hand Written and the Exact Types of Spices and Herbs used. It was the Most Flavorful cook ever made as the Spices and herbs were Unreal in Jamacia It was way Better than Any of the Other Countries and Grace's or 99-X. The Jamaican cooked KFC was still more seasoned that the Hand written Version made.
Attempts were re cooked adding more of the Hand written seasoning to flour Ratio and also re mixed the 99-x and Bumped the ratio of seasoning Higher to Flour which made it MUCH better compared to the directions Marion Kay List.
Then We Mixed the Marion kay to a equal weight amount as the hand written Old C.H.S. Chicken recipe NOT following Marion Kay instruction and it Made a WORLD of Better 99-x chicken but increased seasoning.
After cooking 25 different versions and using over 35 lbs. of flour a Ton of Chicken we ran out of Time Playing and had to sanitize and drain the Pressure cooked and Sanitize Time was NOT on our side unfortunately.
There was so much information learned from Old KFC cooks who were on hand with knowledge There is just NOT enough time to post the info at this time while on a trip going to other countries

Now, I’m curious about the Jamaican Water grass. Do you think the spiciness is due to a higher concentration of herbs and spices in the mix. Or possibly more extracts/ oils?

deepfriednew101, how many grams of 99-X would you add to 1-1/2 Metric Cups (200 grams) of flour? And then how much Salt would go along with that?

DF, I have watched all of those videos about Jamaican KFC. What they don't show is how the contents in the seasoning bags are constructed. That is where my research is centered. Jamaican KFC is far superior to all others, from what my research shows.

I was in Montego Bay last year and wanted to go, but the line was around the building and we were paying the taxi by the hour. I did go to the grocer and purchased local pimento, 2 brands of ginger, 2 brands of coriander and a bunch of different jerk paste. The ginger was hot. But being in California, we have really fresh spices and I found the stuff I get at the restaurant supply store superior. It may be Jamaican as well, idk?.?. Also went to a jerk shack that was really good. Amazing, flavor wise, but white meat was a little overcooked. Festival fried dumplings and conch was really good too.

I will answer ALL Questions after some rest from Travel.
Current multiple country visits and Check out Spices and Herbs
I have Travel the World and Every State in the USA and province in Canada over a life Time and ate at more KFC than anyone would ever imagine.
The Comments from OTHERS who travel to Jamacia this trip 2024 WHO HAVE Great knowledge of KFC and the items of which Many have cooked KFC Original Chicken for decades and some have been retired for decades BUT know the Original Chicken
The Major comparison and outcome assessed so Far is the Jamaican Country Has superior Spices and Herbs of which most Hand Picked in regions and the Legislation for the KFC Product which is MODIFIED for the Regional experience and they cook other Flavors and Make many different item NOT seen in Canada or the USA menu's
Many Spice Companies were visited to secure Purchasing of the items to send to Canada also.
The Jamaican Laws are Much more relaxed than Canada CFIA or USA FDA
My One noticeable difference NOTICE in the seasoning for the Original KFC THAT STOOD OUT was the Pimento Pigments Black spec's mixed with Pepper it was the major NOTICABLE item and It DID NOT over power the Other Spices or Herbs.
I Don Not Want anyone to think that the Flavor was the exact OLD original KFC C.H.S. made because it is NOT BUT from a stand point of the MOST Flavorful NEW AGE KFC similar Original Chicken that NEW AGE makes in 2024 It is BY far the Best Flavored representation of KFC Chicken in the Last 15 years many indicated they had.
I will NOTE that the Staff making the Chicken in the KFC ARE way more specific to following the way to make the chicken with the 7-11-7 method and THEY sift the flour more than Other locations I have been associated with. The attitude is They make more chicken and if they are sort or runout while sifting and re stationing they KNOW the people will wait for the Chicken
Quality in Cooking was Higher than most locations I have seen in it does NOT mean they don't screw up BUT managers are more on the Process they also mentioned Staff retention was HIGH and the turn over rate for staff is Low which is NOT the issue in Canada or Other countries

DFN101, was that a KFC culinary seminar that you were on? If so, how did you get on the invite list?
If the Jamaican/Mexican ginger is stronger, did it overpower the other spices. If not, would you say that other spices were bumped up to achieve balance?

It was a Booked trip which many Old, Retired, and other K.F.C. Franchise Owners, Plus other Franchise Associates from different Companies, and associated from Canadian and other Countries occasionally take, many go looking at C.H.S. Memorabilia and other Corporate Museums related to Restaurants and Cooking. The group is Long time Known associates and Friends through various ways in the Corporate and Business world which has made long time friends.
The Items Did Not over power the other items as we regulated Amounts
Combined we Have 100's of years of Cooking Chicken with many different Companies and the wealth of knowledge made the recipes.
The Great thing about the Trip is meeting many People who are prepared to help find items and memorabilia for some of us.
We were also able to secure cooking facilities to make the chicken while the locations were closed at Nights While Not infringing on any franchise breaches.
The Jamaican KFC seasoning is a More Pure Spice and Herb combination than Canada and USA.
It was compared to other county original Seasoning and the Look and aroma is MUCH much more enhanced than others
Quality Spices and Herbs with the Brined / Marinated chicken makes a Massive difference.
When the Trip is over weights and amounts from all countries are using will be posted.
Pastry Flour is what most countries are using for the Flour.
While talking with many Old Franchise Owners and Cooks who have decades of experience it is noted that obtaining staff who stay any length of time is a issue in most countries and Having People who cook the chicken properly and follow the key steps of Sifting and watching the consistency of flour in the Lugs is a Major issue with short staff and over worked staff the People cooking cannot typically keep up with All taske and cut corners.

There was a Representee from a Jamaican Spice Company who made a comment that KFC was Nothing more than a Pickling Spice Ground up in different amounts than what Pickling Spice is Blended. He provided 10lbs of a Jamaican Mixed Pickling spice in whole seeds and spices which contained 11 Ingredients and said it is a representation of KFC or similar ? Ingredient's Allspice (Pimiento Jamaica) Bay Leaf Black Pepper Cardamon Chillies Cinnamon Cloves Coriander Ginger Mace Mustard Seed I wanted to do some research and viewed Club house Pickling spice container At the next country stop Pickling Spice will be ground up and Add to Flour and mixed with Flour and compared to KFC fried chicken.

I was making corned beef during the St. Patrick’s day holiday, using individual spices, and the aroma of the brine made me think of my fried chicken. Most home cooks just use “pickling spice” because it has everything already there. Edit* I posted this in April last year.
