Here the pulverized Vanilla Bean sits in for Ginger and it's Zingerone/Vanillylacetone. It seems quite likely to be a one or the other proposition, but Vanilla Bean offers the advantage of requiring less weight, allowing for more weight emphasis to be placed elsewhere.
Note that the Egyptian (Arabic) recipe contains zero Ginger, but it does contain Vanilla.

If you are not perceiving adequate note, bump up the Coriander to 1.50 grams before altering anything else.
Next in line would be to bump up Allspice and reduce Anise Seed (or simply switch them around).

I still get mixed up reading these things. Are these suggestions for today's flavor, or yesterday's? And if you never ate early KFC, how can you take these suggestions and work with them? I'm serious about getting responses on this. I've taken so many suggestions and leads in the past, just to end up at......nowhere. Dang it Jim, I don't want today's KFC recipe, I want the old one.

I would have first tasted Kentucky Fried Chicken in 1959 when the Kenny Kings Restaurant franchise chain in N/E Ohio began selling it. There was a Kenny Kings within about 2-1/2 miles of my childhood home. I would have been 4 years old. We did both eat-in and pick-up. The adults used to talk quite frequently of Kenny King first meeting CHS in an alcoholics ward. Either that or it might have been a mental institution ward. I forget which one. Just saying what I rather often heard as a child... |

It would make things simpler if the time frame was suggested. If there is still an occasional note detected today, and my KFC seasoning bags have pretty much only pepper, msg and salt, then the note has to primarily come from this. Youngsters looking for the recipe today, can have little to no importance to me; Joe Blow says that recipe 409 has the note, and is stronger if item ZX is increased, becomes a misnomer, if Joe Blow was born in 1985.
