KFC Flour mixture Post 1970’s
Crispy Golden-Brown Style Coating
1 1/2 cup (200g) All-purpose flour APF / Pastry Flour works better
1 cup (110g) Cornstarch
2 tsp Baking Powder
2 tsp Milk Powder * Milk Powder can Darken the Coating also If Coating is to dark color Remove Turmeric / Annatto or test amount lower than 1 tsp. each
1 tsp. Egg Powder
2 tsp Salt
1 tsp Black Pepper
1 tsp. M.S.G. (Monosodium Sodium Glutamate) or 1 tsp. Chicken Stock Powder
1 tsp. Turmeric (color) * Optional if Milk powder Darkens the Coating to much
1 tsp. Annatto (color) * Optional if Milk powder Darkens the Coating to much
NOTE IMPORTANT Sift the Mixture 3 times or more Prior to use.
Some Modifications to Recipe may be required with Different Flours and ones which are Not High Gluten

No Herbs and Spices? Is that supposed to resemble Extra Crispy?

It's the Base for the Flour ONLY
C.H.S. said He Originally added the 11 Spices and herbs to a Special Flour blend.
In the 1930's the Flour was a Tri-Blend Wheat, Corn, Barely
the New Age when they went to the Crispy had Flour which is High Gluten
The way the Flour was Milled also Changed as the OLD Stone Mills had cross contamination between Milling and the used More Blended Grains for Flour.
The New Mills Do Not have to worry about that issue and Mill Only individual Grains and Can Clean the Sieves Milling Machines.
You can use the Above Flour mix to get a Great Crispy Coating Like NEW AGE KFC and Add your Own KFC Mix or 99x
