This once great forum is experiencing major disruptions from an individual who openly acknowledges being a drug addict. It's concerning that despite this admission and the obvious delusion, there's still a significant level of engagement from others who seem to be taking this person seriously: "My mind is not as good as it could be and has mild form of dementia. Or maybe it's just all the weed i smoke."
This individual, despite his inherently unstable nature and temper, tries to present himself as the pillar of consistency and stability, accusing everyone else of not being able to decide which ingredients are in the OR: "That's the problem with you guys, you can't make your mind up on what ingredients are in the recipe."
Well, since being "on the verge of cracking the recipe" this individual went from 13 ingredients, to 27 ingredients plus 6 additional ones he is "still considering", and yet he actually believes that everyone else can't make their minds up. Let's take a quick look. Shall we?

I think you are actually the parasite that should leave. I atleast am sharing my work and recipes. What recipe have you even posted?

with all of the pothead-shaming aside, I concur that mustard is crucial to the crust of original recipe.
kfc in many countries always tagged mustard and celery in it while others not. I believe the ones that have those two are those who are using the original recipe.
without mustard, the coating falls off despite the temperature. and the usual nutty flavour of KFC is gone.
I’ve done enough compound and aldehyde studies to pinpoint certain compounds that belonged in mustard which many “veteran fry chef” missed. They say cardamom wasn’t there because cineole is not in the analysis but when you do some minute long research you’ll discover that sage have cineole. What many neglects to realize was that many compounds turn to a totally new compounds when heated.
but on the other note, 20 herbs and spices is too much. The Colonel said in his commercial “You’ll end up with confusion of flavours”.
My advice is that you use very base ingredients and dodge spices that have multiple personality disorder (allspice, savory, ancho, etc.)

Mackerbryanee14, were some of your studies performed in a lab or were they dry studies? Your work precisely deals with my interest on why the mixes devolve to another aroma direction. So perhaps, this work will eventually lead to the precise ~11 H & Spices. I hypothesized that it’s the ph effects (or other) that affect some spices more than others. The powdering process facilitates the exchange of compounds or elements.
On the mustard effect on the crust, how or what mechanism do you attribute the mustard enabling the crust to adhere?

according to my research (simple googling) mustard (yellow) contain lots of mucilage and polysaccharides. Those, when comes into contact with liquid forms a gel. This gel is that crust coating that surrounds the chicken, binding all the “natural goodness” within.
My current mix exceeded 740 grams. I spent a week trying to cram all that correct and calculated proportion of mustard meant for 25lb flour in that number. So I said “f@$k it!” and I went for the 1134 grams/60 oz KFC bag. Finally I was able to fit all that ton of mustard. I have a strong feeling that it was the 60oz KFC seasoning that the KFC guy used in that “Fully Unwrapped KFC” demonstration video.

Interesting take on mustard. And its color adds to the candidacy for mustard being in the iconic 11. Also, the sulfurous compounds are high to counter or round out the note in the herbs and spices. The sulfurous compounds could decrease the ph to affect the rest of spices during the frying process thus releasing or reacting with the cineole or eucalyptus compounds. I’m wondering if adding soda might make the sitting powdered mixes more stable.

Gotta love how East Frisian just twists what i said, and adds even more spices onto my list to discredit it anyway he can. Juniper berries Cumin seed Fennel seed Anise seed Star anise ^ none of those are in my 100%ers or recipe i posted. I only said i am still thinking about them. Might aswell add every single herb/spice known to man because i am still open to the idea of any other spice/herb being in the recipe. Really bizarre how you'd go out of your way reading up my post history then putting together an entire post just to discredit me. Exact behaviour a shill would do. Love how you mention and highlight the weed smoking part, as if you are the one exposing me for this, when I am the one who openly said it. It's like why go out of your way to disprove me, if you already think i am wrong? I am just a random person sharing his opinion. It's not like i am claiming to be related to Sanders, or saying i personally knew him, that would be something to try and discredit because it would give more weight to my opinions, but when i am just a random person on here you can simply disagree, not make an entire post trying to tarnish my image. Since when did my opinion carry such weight? However, if what i was saying is mostly true, then yes this is EXACTLY what a shill would try to do. This is basic psychology. Except, i already said i don't care what anyone thinks bud? this post doesn't at all change my opinions bud It can only change what others think, but i already said idc what anyone else thinks??
