I'm curious to people's opinions.
Buy a piece of KFC OR and you can see seasoning on the batter. Lots of people see black flakes and presume they're black pepper. It could be anything though as stuff goes darker in colour as it cooks.
Seems like people pay less attention to the other colours. look at it and there is clearly a red spice on the breading. I voted for Cayenne because I have achieved good results with it. To those that didn't vote Cayenne, what do you think those red flakes on the breading are? Paprika? Sumac?

I can't say that I've ever seen red specs in KFC OR, but lately I've been having great success with what are commonly referred to around these parts as 'Pizza Pepper Flakes'. I'm now at a preferred 1.5 grams in 200 grams of Flour for these. That's probably fairly close to 0.5 grams of Cayenne.

There are more than 11 elements. Listing only 11 Hs&Ss is only a partial recipe and IMHO will only serve to mirror Grace's, and/or modern KFC.

Heck, I'm up to 23 ingredients, not counting the brine. I watch these cooking shows as master chefs prepare masterful dishes. They make various spice mixtures, sauces, marinades, cooking techniques, layers of vegetable and fruit flavors. Tons of ingredients. Then I look at what I've tried to do for many years, KFC using a small handful of herbs and spices trying to keep the weights as low as possible. There is something wrong with this scenario. Thus the purpose of pushing this "11 Ss&Hs" propaganda.
