Smallgree: Do you have the actual bag or the jpg image? I cant quite see the all ingredients.. salt, mono sodium glutamate, sodium phosphate (?) too blurry. Perhaps you can read them better from your end.

Thanks DFN101. Do you, or anyone, by any chance know the reason for adding the individual phosphates to the marinade. As phosphorus is not healthy for anyone with chronic kidney problems, perhaps we are serving a higher purpose for deciphering the OR KFC recipe. As I suspect, some of us are close to the recipe already, we could omit the phosphates. I cannot imagine them used as a spice.
I assume some, or all, are involved as a preservative. Do some caterers or restaurants still add them despite not dealing with store shelf longevity issues?

Catering or many places use commercial items which are laden with chemicals Yes
BUT some use Old fashion Methods which use the more naturals items

I am a bit disappointed in seeing so many phosphates in the marinade list. So I’m now wondering how long the marinade sits at the warehouse or how long the chicken steeps in the marinade. Or if the marinade gets shipped internationally. Or made abroad and then shipped to the US or in your country, Canada.

They help hold water. The process is explained in the manual. If it sits too long the chicken will be too salty.
