I tried the 99x in 2019 and was quite impressed with it tbh. It definitely had what i call the "kentucky" note to it when cooking it. Only thing i didn't like was the kind of black pepper they used it in it which is some strange vintage smelling black pepper which is supposedly "telicherry" i also bought a tub of their black peppercorns and it had the same strange vintage smell as the 99x did. At first i thought that is just what telicherry smells like until i bought a different brand of it, and this stuff was incredible, incredible stuff. It had none of that "vintage" kind of aroma to it, but instead just incredibly aromatic delicious smelling pepper.
Not a fan of marionkay black peppercorns tbh. I still got the whole tub of the 99x left and it hasn't seemed to have lost any of the aroma.
I reckon if i scoop off the top layer, the layer underneath will be almost as fresh as when i bought it.

If the container was sealed tight there would be zero reason to worry about a Top layer ?
either the whole container is Perfect of the whole container is diminished ?
When you made YOUR 2019 Recipe Did You use the instructions on the Tub or did You modify the instructions ?
Our Testing is that the Instructions are incorrect with the Amount of 99-x to Flour ration and When Cooking in relationship to the Direction's it was WEAK tasting and the People Tasting it Liked it much more when there was 1.5 to 2 times as much seasoning of the 99-x Used ?
That would give you a reason to re-test the 99-x if you also felt it was weak and Do a cooking with MORE seasoning of the 99-x
It seems that everyone wants to say it was weak BUT few want to admit to how much more to ADD.

Yes there would be. The containers are not airtight and the top layer will degrade since it is exposed to oxygen in the cavity, but it will protect lower layer. I don't care to test the 99x anymore, just wanted to give my thoughts on it in case it helps anyone. From memory i think i slightly boosted it.
