Roasting Herbs and Spices
the Logic of Roasting Either Herbs or Spices seems Wrong in a principle when you are going to Deep fry the Herbs and Spices in 350 to 400 deg. Oil which will ROAST ALL HERBS AND SPICES in the LAVA HOT OILS

The only thing you need to worry about is having quality aromatic pepper/ herbs spices. Pepper is most important or it won't enhance the others. Weak smelling mix = weak cooking aroma.

Cooked up a recipe with a mix of Muntok, Kampot, and Indian white peppercorns with my tropical far north qld black pepper. Wow, just WOW! I can pretty much say i'm done with my quest now. Pepper is not pepper. If i were to have cooked it with mass grown store bought pepper it would be tasting like a completely different recipe.

Anyone who thinks ALL Black or White Pepper are the same HAVE ZERO cooking and Spice Knowledge.
its been Acknowledge in so many independent test the thought to disput that Quality Ranges massive is Stupid thought.
There is a Misunderstanding of Volume also when YOU use a High Quality you can drastically reduce Volume in some areas ?

That's why i could not believe when i read a comment on here that said that Glen and friends guy said there isn't really a difference between telicherry vs regular black pepper. Cannot believe someone with that much cooking experience would say that because it is completely wrong. I don't really use telicherry because i don't like the flavour profile. If you were to use it, it'd have to be mixed with another type of black pepper. This qld black pepper i got is a beautiful and amazing flavour profile which is like a mix of telicherry and regular black pepper. The other thing people get caught up with is origins of spices which really doesn't mean much for alot of them. You should focus on what the quality is like before worrying about what origin it came from. It doesn't matter what origin it came from if the quality is bad. Ginger from Jamaica doesn't automatically = quality. You could have good quality ginger from Jamaica and low quality ginger from Jamaica. I wouldn't say certain origins have a better quality, but instead a better flavour profile than other origins. Still need to get some more Jamaican ginger tho cause that stuff is seriously next level and 10x better than regular ginger. I am finally at a stage where instead of experimenting, i am now cooking to eat and enjoy the chicken.

At one time, Tones was the best. Sam's sold it, but replaced it with their own brand. Sam's brand is larger than my Tellicherry.
