M.S.G. Allowed Amount Canada
a general guideline is to allow no more than 5 mL (1 teaspoon) per kilogram of food (or 1 teaspoon of monosodium glutamate weighs 7.98 grams.)
or
2 mL for a dish of vegetables serving 6 people VEGETABLES ONLY
This Guideline Would Effectively Mean that For a 2.5 lbs. Chicken 9 Piece there would Only be 1 teaspoon of M.S.G. Maximum allowed by the Government to be a Safe Allowed Amount in Food
So if the Calculations are correct then approximately 8g of M.S.G. would be used in 2 Cups of flour
PLEASE Double check these Fact's and Figures as it was Provided From C.F.I.A. as the acceptable amount they suggest used in Foods and K.F.C. NEW age Global has stated they USE ONLY the Permitted amount In India there was much Cause of Concern and Australia also for M.S.G. amount as it was listed as the FIRST Ingredient's and ALL Government Departments DID NOT investigate as they Said that K.F.C. has satisfied ALL Legal Requirements for M.S.G. Use and Proved it on other Inquiries ?

1 roughly level metric teaspoon of MSG weighs close to about 4.33 grams. That makes 1 metric tablespoon about 13 grams.
General guidelines don't sound like rules to me.

Not sure on the math but I don’t think it is too far off. Think of it this way as well. You tend to see most recipes on 200g flour using 3-6g MSG and double that on 400g recipes. Which were scaled off the 25lb flour and a 26oz spice bag. If you say 8g MSG into 400g flour. That’s 1/2 pound MSG in every spice bag going into 25lbs flour. And at 12g. That’s 3/4 of a pound going into a 25lb bag.
I find I like looking at the full recipe numbers sometimes as a scale reference.
We know the MSG came in 100lb tubs. So at 1/2 pound going into each spice bag. That’s 200 spice bags out of each 100lb tub. And at 3/4 pound it’s 133.33 spice bags per 100lb tub. So significantly less for sure. Would the cost have driven CHS to go 1/2 pound instead of 3/4 I’m not sure. In todays fast food market I bet yes unless MSG was cheaper than other ingredients.
What I’d love to learn is when he had the first half dozen franchises. How much did they need to hand mix and supply.
