Was Caraway Seed the original source of KFC OR's requisite nuttiness, pre Coriander?
200 g. Pastry Flour (1.5 Metric Cups)
30.0g. Salt
6.00g. MSG
3.00g. White Pepper (Fine)
3.00g. Black Pepper (1g. Fine, 2g. Med. Coarse)
1.25g. Caraway Seed [1]
1.00g. Ginger [2]
0.75g. Sage [3]
0.50g. Tabasco Pepper [4]
0.25g. Summer Savory [5]
0.25g. Marjoram [6]
0.25g. Garlic Powder [7]
0.25g. Nutmeg [8]
0.20g. Clove [9]
0.15g. Mace [10]
0.10g. Cinnamon [11]

The Caraway Seed is about 7.5% oil by weight.
The two main molecular compounds found within Caraway Seed oil are Carvone, and Limonene.
As a percentage of the oil by weight, Carvone ranges from 45% to 95%
As a percentage of the oil by weight, Limonene ranges from 1.5% to 51%
The flavor of Carvone is described as Carrot like, and Bread like, and Rye like.
The flavor of Limonene is described as Citrus like.
Carvone is also found within Dill Seeds (Caution, not Dill Weed).
Limonene is also found prominently within Orange Zest and Dill Seeds.

Dill Seed oil is about 42% Carvone (give or take a bunch), and 32% Limonene (give or take a bunch).
Dill Seed may have the potential to be a better Caraway than Caraway. ?

Since you can never be too sure of the Limonene content of your Caraway Seed, adding a bit of the true zest of an Orange couldn't hurt.

A search of this forum turned up this interesting tidbit from deepfriednew101 from back in February of 2022. If DFN101 actually knows the OR, such as he claims, then Coriander Seed is out and Caraway Seed is in. |

Personally I could careless what people think or feel anymore, I just Point out Fact's which people have a issue with.
I will advise you that caraway has been used by NEW AGE KFC as I don't give a CRAP ABOUT there recipes they have used it at low levels. Caraway was NOT listed in the Recipe Tommy S has which is a 1965 Recipe.
I will NOTE this in 1974 Esquire Report of KFC Chicken Waverly Root listed, Caraway while Roy Andries listed Turmeric BOTH have similar Taste SO you could derive KFC might have had Turmeric also from 1974 (it is NOTED KFC NEW AGE has listed Turmeric as a color agent in KFC Chicken but when you use a spice for a color agent YOU DO NOT LOOSE THE TASTE)

Coriander as everyone KNOWS is in 99x BUT it's interesting it was NOT listed in the Marion Kay Original Chicken Seasoning and ONLY got listed on 99x after 1977?
The Old Classic KFC Original Colonel Chicken Recipe Had More Flavor of Herb undertone combined with the Pepper, Sage, and it had VISIBLE Herb Flecks,

In February of 2022 you said Caraway Seed is an ingredient that was used pre-Coriander Seed, and now you say it isn't? Why should anyone ever trust anything that you say?

Marion kay Did NOT list Coriander until AFTER 1977 Do the MATH 1974 is before 1977 ?
If it was used in 1974 as Esquire Reporters thought, then it was used before Marion Kay Started using Coriander which they Posted in 1977
YES Caraway Seed was USED BY NEW AGE KFC before Coriander was USED, C.H.S. even sue KFC for the Change of His Original Recipe ?

I'm NOT saying either way if its a Item in the Recipe that is Hand Written By C.H.S. LOOK at what the OLD PEOPLE ARE saying
OH and READ THE Tommy and Cherry Court case
