Popeye’s isn’t good in my local area. But I’d guess it’s the staff working there. I have even waited for a fresh batch. But I have had decent Popeye’s before.
For spicy chicken I got spoiled and tried some Gus’s Fried Chicken in Memphis on a trip there a few years back. It was great and I got to watch back in the kitchen from where I sat

It was great and I got to watch back in the kitchen from where I sat I would like to give Gus's Chicken a try. Most Popeyes Chicken around me is very hit and miss. Consistency of quality is totally lacking. Ditto for Lee's Famous Recipe Chicken. Consistency is the Achilles Heel of many chicken franchises,

Memphis. Also serve your chicken on a slice of white bread. Tried deep fried green tomato for the first time ever there as well

100. grams Cake Flour 100. grams Cornstarch 27.0 grams Salt 7.00 grams MSG 3.00 grams White Pepper 1.50 grams Coriander 0.50 grams Garlic Powder 0.50 grams Onion Powder 0.25 grams Cumin 0.125 grams Turmeric
Open kettle fry in a deep fryer set at 340 F. (170 C.) throughout, and fry for 13 minutes.
