Something weirdly different happened today. My wife and I ordered a 16 piece box of Popeyes Chicken today from a restaurant about 40 miles from our home, half mild and half spicy. The weird part was that this wound up being some of the most amazingly mouth watering delicious deep fried chicken we ever tasted, both for the mild and the spicy. It put modern day KFC to shame. The Popeyes outlet that's about 7-8 miles from our house never made chicken that tasted this good. And our local Popeyes chicken is often dry. This chicken however was moist and juicy even for the breast pieces.
PS: After experimenting with it myself, I'm fairly certain that the red flecks seen sitting underneath the coating for the spicy version is dried and ground Tabasco Peppers.

This is my guess as to a potential Popeyes Spicy Chicken clone, fresh off of eating some of the best deep fried chicken ever. The recipe seems to me to be very simple. No Ginger, and no Clove or Allspice. No Mace or Nutmeg. And no Herbs.
100 grams AP Flour 100 grams Cornstarch 27 grams Salt 7 grams MSG 2 grams Dried and Ground Tabasco Pepper 1.5 grams Coriander Seed 1 gram Dextrose (or 0.7 grams Granulated Sugar)

Cook at a setting of 340 degrees throughout, using Canola or Peanut oil, in an open kettle deep fryer. 13 minutes of deep frying would be my initial guess.

For the mild substitute the dried and ground Tabasco 1:1 with White Pepper.

On the Popeyes website I learned that the coating is a batter which appears to potentially be identical for both spicy and mild, and the spicy chicken is salted with a blend of salt, peppers, garlic, MSG, cumin, and mustard, while the mild is seasoned with a blend of salt, MSG, garlic powder, and onion powder. I can't eat it because it is fried in soybean oil, as is KFC. I won't eat the poison.

Here in The Netherlands there is no Popeyes Chicken. No idea how it tastes. Does it have a note? It doesn't at all present the note of 'KFC'.

It almost tastes a hint buttery. Buttery Flavored Crisco (or similar) may be the deep frying oil of choice.
