Remember the story was he was given a 100g recipe to be added to a certain amount of flour. On the surface that would mean he wasn’t subdividing the 100g into lesser amounts. And that is irrelevant*. All that is relevant is (within the context of Winston Shelton) how many grams of seasoning mix are required to be added to 200 grams of Flour and about 28-32 grams of Salt. And thus for sanity I scale my recipes accordingly, and (until now at least) flg always did likewise. (Whereas flg is on record stating that he doesn't [or previously didn't] like the recipes seen on Glen's videos because they made a large amount of seasoning mix and then fractionally added it to Flour and Salt. *It matters not at all if one makes 100 grams of seasoning mix and then adds 20 grams of it to 200 grams of flour and 28-32 grams of Salt, or if one simply makes only 20 grams of seasoning mix. Except when the recipe is unsatisfying and you have to toss out 80 grams of seasoning mix.

I think the thing for us is we are mixing a batch to cook chicken for 3 or 4 people. So excess is potentially a waste if the recipe sucks. It sounds like Deepfriednew101 has the ability of getting rid of. For better lack of terms. A higher quantity,
The 200g scaled recipes are perfect for small home cooks

Should add when making multiples like cayenne blended with paprika. I make more than the combination I need as it’s easier to make sure the scale is right. But I use that up in another cooking adventures
