Simplified, when the 26oz seasoning bag was opened and poured into the flour (whatever years that was), it contained 100% of whatever was in it. That is the OR. The vials and the "magical 11" were marketing gimmicks.

The word's Secret Ingredients were BUZZ words used By More then C.H.S. in 1930's
Look at Durkee's Dressing and other Photo's of Ad's I have Posted 20 times or more which were BEFORE the 11 Herbs and Spices C.H.S. just coined the Phrase Better then anyone? There were OTHERS using the words secret ingredient since 1935 ? and they contained more then 11 Items

BOTH FDA and CFIA have stated that there is NO LAW that Holds K.F.C. New age to ONLY use 11 Herbs and Spices as they have NEVER represented it to F.D.A. or CFIA or any other agency in the world as ONLY ONLY ONLY ONLY ONLY ONLY ONLY ONLY ONLY ONLY ONLY 11 Items or Ingredients so there is nothing they can do and they both said if a person feels its a Misrepresentation then that's A UCC code issue in the USA and in Canada a Consumer Misrepresentation and NOT A SAFETY issue ?

After recalling how awful my previous attempt at adding the scaled down equivalent of 4 Oz. of Ginger was when Allspice and/or Clove were also present, I've revised my latest Winston Shelton guess a third time, replacing Clove with Star-Anise whereby to remove most of the Eugenol. It may be that our recipes require either Eugenol (primarily from Clove or Allspice) or it's molecular level kissing cousin Zingerone (from heat decomposed Ginger) but not both at the same time. This revision, which is Zingerone rich, restores licorice to the recipe while fully scaled complying with Winston Shelton when everything gets multiplied by 5.
Edit: With the Ginger being so high and the other heat decomposition product of Ginger being the strong and pungent Pepper oil called Shoagol, the Shoagol will hopefully assist in achieving the requisite lingering Pepper bite. A second bonus from boosting Ginger and suppressing Eugenol. Edit #2: These Winston Shelton recipes also suppress Sage, just as for Grace's Strong Blend (per Glen, of Glen and Friends Cooking, as seen in his KFC episode #10).

when I calculate 1 - 11 items added together its 12g
12 grams multiplied 5 times = 60 grams
Winston S math of 20g plus 10g Plus 4g the 10 ingredients ONLY added up to 87gram with 1 Ingredient left out 13 grams ?
Your math and way of adding M.S.G. and Salt into the Math equation effectively eliminates 40% of Flavor which is to be Given from the 11 ingredients.
So your effectively almost using half the amount of Herbs and Spices require in Any recipe or making a Double Double Coffee with a Single Single and trying to pass it off as the same.
Go buy anyone a coffee and cut the sugar and Milk in 1/2 and see Ho they enjoy it ? They will say its wrong.
or recreate any recipe and cut the ingredients by 40% and see what People think ?
ONLY my Opinion based on Understanding of the Winston Story. where 11 Herbs and Spices added to 100g
I know you are trying to make a Great version of chicken and Not the Original Recipe so it may be great Chicken ?

deepfriednew101, until you post a complete recipe in a fully sane enough fashion as to be fully understood by all of us on this forum there is no reason for you to endlessly insist upon massive levels of ingredients. flg and I have both traveled the "more is better" path and found only failure via that route. We have both concluded that less is generally better. This recipe (in order to meet with Winston Shelton compliance) is already verging upon (if not exceeding) an ingredients overload.

If the Recipe called to MIX 100Lbs it Does NOT mean you PUT 100Lbs into the Recipe ?
If the Recipe say Mix to 100g then it mixed to 100g or divided into equal portions of 1/2 or 1/4 ETC ETC
YOU ARE NOT DOING THAT you are Choosing to Make your OWN recipe of 13 items added to 100g or 11 Items into 60g well that DOES NOT WORK
YOU DO NOT KNOW what level of the seasoning was blended to the 100grams of season or How much Salt was added to the 100grams ?
STICK TO THE Base Story 11 Ingredient Herbs and Spices add to 100grams IT DOES NOT SAY USE IT ALL in 2 cups of FLOUR ? which you are assuming ?
Using the Correct amount of the Mixed 100grams mixed to the Correct volume of Flour and salt is NOT overload
Mixing Any 100g of seasoning to incorrect volume of Flour or Salt WILL BE OVERLOAD.
Just because Claudia mixed Barrels of 100Lbs of Herbs and Spices Does NOT mean you Dump it into 25LBS of Flour ?
Just mix the 11 Herbs and Spices to either 50gram or 100grams and figure out How much Flour works to make a Flavored seasoned Flour Salt to taste ?

Remember the story was he was given a 100g recipe to be added to a certain amount of flour. On the surface that would mean he wasn’t subdividing the 100g into lesser amounts. The full 100g went into so many grams of flour. I agree. When making small batch of ingredients probably better to mix larger amounts and subdivide. Then mixing .1g plus .1g specially on the cheap digital scales. I agree with Silver I can’t follow the train of thought it’s all over the map. I don’t care about your hand written recipe. But it would be helpful to post your go to recipe for KFC in a format we can all digest. Then we could entertain a cook off of yours compared to mine and Silver recipes
