I often wonder if before extracts which I think come early on for pepper. Purely speaking black pepper was heavier than white. And only after extracts did actual black pepper become less than white.

I often wonder if before extracts which I think come early on for pepper. Purely speaking black pepper was heavier than white. And only after extracts did actual black pepper become less than white. This would mean that since we are not users of pepper extracts we should add more black pepper than white. I'm leaning toward something along the line of ~2/3 black and ~1/3 white pepper. I'm also circling back to Cayenne due to it's ability to add heat while maintaining flavor neutrality. Something along the lines of 4 grams Black Pepper (various grinds), 2 grams White Pepper, and 0.5 grams of Cayenne. Or alternately, 5 grams of Black Pepper, 2.5 grams of White Pepper, and no Cayenne. With the latter freeing up a slot for another H&S ingredient. And with respect to those who have tried adding Cayenne and found it to bring with it too much heat. 200 grams Flour 30 grams Salt 8 grams MSG 5 grams Black Pepper (Various Grinds) 2.5 grams White Pepper Etc...

Putting it all together and adjusting to 40 Oz. bag compliance.
200. grams Flour 30.0 grams Salt --------------------- 6.00 grams MSG 5.00 grams Black Pepper (Various Grinds*) [1] 2.50 grams White Pepper [2] 1.00 grams Coriander Seed [3] 1.00 grams Ginger [4] 1.00 grams Sage [5] 1.00 grams Toasted Yellow Mustard Seed [6] 1.00 grams Celery Seed [7] 0.50 grams Anise Seed [8] 0.50 grams Savory [9] 0.25 grams Nutmeg [10] 0.25 grams Mace [11]
20 grams below the dashed line = 40 Oz. bag compliance
*(or for simplicity: 1/2 Fine, and 1/2 Medium Coarse)

Dried and crushed (or rubbed) Celery Leaves may be used in place of Celery Seeds, and this change boosts the Herb count to the three seen in the vials.
