Imagine this in your head
Profession Chefs who cook Pan Seared Steaks use 2 to 4 Tablespoon of High temp oil and 1 Clove or 2 or garlic Fresh and 1 sprig of Thyme to 2 or 4 Tablespoons to Flavor the Oil on a Steak prior to Oven Placement or serving.
We have 25 Litres of Oil in a Pressure Fryer ? How much seasoning gets sucked into the Beef Tallow or Oils that is sucked out of the Spice Mix when NEW ?

We did multiple test yesterday while the Stanley Cup play-off Game Edmonton Oiler vs Las Vegas golden knights
These test were simply HOW MUCH spice and Herb mix to 200g - 250g Silted Flour is Needed
we used set amounts of Flour, Salt, M.S.G. AND DID NOT change those amounts
We set the Flour at 200g - 250g Sifted Flour
The Seasoning Mix we determined at 50g to 250g Sifted Flour was the Lowest amount that should be used BUT THIS WAS A LOW AMOUNT in the people trying the Wings and thighs.
All amounts about the 50g when increase ONLY improved the taste we attempted to find a amount where Too much Spice and Herb caused a issue reversing the effect of High Spice and Herb making a worse or significant change to the Quality of Fried Chicken.
What we Noticed was with Higher amounts of Spice and Herbs the cooked chicken became much darker in color and even a burnt taste.
we Do Not have a issue when we used 75g Seasoning to 250g of Sifted flour.
Now that we have our Beef Tallow seasoned from over 200 orders of Wings and thighs cooked we are going to try another Flour as we tested a New Flour and want to test the other Flours we have used
so on a low scale we found a 5 to 1 ratio was the Lowest People enjoyed 250g Sifted flour and 50g Seasoning
Today will only be a test of the other Flours we have used and will be a much slower Volume of cooking chicken.
With the Hockey Stanley Cup and The current Wild Fires situation which has our staff in camp cooking swamped we WILL NOT be testing many Chicken test as we are Too busy to try things we know the items spice and herbs are what's needed we just wanted to find the Level of Spice Needed as THERE IS HUGE DIFFERENCE in spices from 1930 to 2023 in Quality and Pure Flavor. ANYONE who thinks different Does NOT know what they are TALKING about and Do Not have Decades of experience. We have 5 people who are over 90 Years Old and they still Help with the knowledge they have from 65 years of butchering, Cooking and Food Manufacturing Plants. They know there stuff and cooked in the 1940 and 1950. If they say there is a BIG Difference they Know there is a Big difference

I've heard off and on that CHS's seasoning is added at the ratio of about 1 ounce per pound of flour. That bodes well for 25 ounces in a container (99-X) and 26 ounces in a bag (KFC).
75 grams of seasoning in 250 grams of flour would scale to 4.8 ounces of seasoning per pound of flour.

If the bag weighed 40 ounces early on (as I suspect), before it was reduced to 26 ounces after the introduction of oleoresins (again as I suspect), and then it was brought back to 40 ounces again via the addition of (the originally separate) powdered milk and powdered egg into the bag, then that would scale to 1.6 ounces per pound of flour.
So 75 grams into 250 grams of flour is a 3X overkill.
1.6 Oz./Lb. x 3 = 4.8 Oz./Lb = 75 grams_seasoning/250 grams_flour

we open Fried the Wings and Pressure cooked the Thighs.
Please keep in mind these Points
1Lbs of our flour is 4.5 Cups of flour as a correct weight measurement as we tested and weighted the New Flour a Pastry style flour
which we took into consideration Prior to the using 2.5 cup ratio to mix the recipe as instructed ?
Personally Do Not Care what Your Math says in reference to Any other Information as we are cooking to a Hand Written Confirmed Recipe written and Proven to be Hand Writing of C.H.S. from Early days as there is NO indication of M.S.G. in the recipe. The recipe is also what KFC NEW AGE made reference about in 5 interviews.
The recipe clearly is Printed Fried chicken Recipe and confirmed in C.H.S. hand writing
Everyone and Anyone can cook and make Chicken the way they want and the directions they deem Fit
WATCH Glen and Friends Video and SEE HOW much was used in 3 videos specifically Dustin, Earls, and Employee ? Glens says that they USE MORE seasoning then ALL OTHER YOU TUBE video or other recipes he cooked and never video BOTH Glen and Jewels BOTH indicate the BEST CHICKEN FLAVOR.
there have been 10 YouTube video who cooked 99x including John O R.I.P. and Food Theory who say its UNDERSEASONED BUT NEITHER did More seasoning to a Higher amount which would have been OVER the 1oz amount for 1Lbs of flour also.
We cooked over 250Lbs of Deep Fried and Pressure Fried wing and Thighs in NEW BEEF TALLOW. which was Unseasoned
I ONLY posted what we found as Information for people to See Real cooking and What the recipe suggested. I have posted 100 Times C.H.S. used Portion CUPS and the original way he showed to Cook the Chicken WAS NOT DUMPING 1 Bag of seasoning into 25 LBS of Flour it was ONLY 10 LBS of flour Bags and HE DID NOT instruct the ORIGINAL KFC Franchise Partner to mix 10LBS of Flour at ONE time.
I have a recipe which DOES NOT SHOW OR SAY 25LBS of Flour.

Dustin Recipe in Glen and Friends is a Higher then typical season to flour ratio ? 45g seasoning to 250g of flour BOTH Glen and Jewels said it could used MORE seasoning to match KFC ?
and other recipe which suggest 48g seasoning to 100 grams of Flour ? NOT a exact KFC BUT amazing Chicken in Glens and Jewels words THEY NEVER SAID OVER SEASONED in the review ?
Remember this Graces Does Not tell you what % of Seasoning to Flour ratio.

Dustin Recipe as Glen Printed it
18g spice to 100g Flour = 45g per 250g flour
Ingredients 28g (1oz) white pepper 28g (1oz) black pepper 14g (.5oz) garlic salt 7g (.25oz) sage 7g (.25oz) coriander 7g (.25oz) ground ginger 7g (.25oz) cayenne 3.5g (.125oz) clove 3.5g (.125oz) allspice 3.5g (.125oz) savory 1.8g (.0625oz) marjoram 1.8g (.0625oz) thyme 340g (12oz) salt
Method: Place all ingredients except salt in a spice grinder; grind and shake to combine. Add salt to mix and shake to combine. Preheat pressure fryer to 165ºC. Mix together 18g spice to 100g flour. Prepare an egg wash of 1 egg to 1 cup of milk. Dip chicken in egg wash, then dredge in flour spice mix. Deep fry until golden brown and cooked through.
