The Current NHL Stanley Cup, Hockey Game Night for the Alberta Team Edmonton Oilers OUR CHICKEN WING sale and NOW Chicken Thighs SALES HAVE sky Rocketed to unheard of levels. We have SOLD OUT of Chicken Wings the Last Game. Edmonton oiler vs Las Vegas Golden knights.
We are restocking our Marinade of the Wings and thighs for the Game #2 of the second Round Tomorrow. Saturday
it may NOY sound like a Big thing BUT when you relate the Volume sold across the Countries it is astronomical.
Tomorrow we are testing a recipe Which would calculate approximately
250g flour 100g Salt 50g MSG
21g Milk / 7g Egg Powder
80g Seasoning (100g was Mixed BUT only 80% will be used in the Flour / 10% will be for Gravy Rue, & 10% for Pre Wing & Thigh Seasoning Brine) 35g Vegetable and Other Contributor's
I know everyone will think it NUTS the Volume of Seasoning BUT we are using NEW BEEF TALLOW and testing a New Flour Co.
We will make adjustments as required if required in the Flour Seasoning Mix - With a New Flour it may be interesting to Dial in the Exact measurements
The Salt and M.S.G. May change also BUT it will depend on the comments.
We will start with a Trail of Cooking Tonight.
We have tested the Recipe we are using on Many occasions But Dialing in the exact measurement with the 2023 Spices and Herbs available.

To me that looks like ballpark 3 times too much salt and MSG for 250 grams of flour. Ditto about 3 times more of everything else...

There is NO LACK of Flavor
remember we used ALL NEW Beef Tallow which releases Tons of the seasoning into the Beef Tallow the first Day.
Once the First Day is over We must change the Amount Added as the Beef Tallow is seasoned and it would be over heavy tasting the Next Day

Willie is correct tons of Chinese recipes for wins and even NOW Korean Fred Chicken recipes are using other starches for a crispy coating.
We have a Franchised for Korean Fried Chicken and it's The Big thing NOW in many area's. The location is Busy all the time and gets High reviews.

I don't use flour at all. You want to crack the O.R but not using flour? flour is part of the recipe structure.
