Based upon sodium information by piece on the KFC website the exposed surface area of each cut of Chicken (when excluding backs) is:
40.9% = Breasts 14.8% = Legs 31.3% = Thighs 13.0% = Wings
I'm shocked that a wing has nearly the same exposed surface area as a leg.
With this information, if you can coat only a nominal 16 larger sized mixed pieces of Chicken with a recipe built upon 200 grams of flour (or ~245 grams), then you can coat the following as individual pieces:
9.78 individual Breasts 27.0 individual Legs 12.78 individual Thighs 30.77 individual Wings

With rounding, call it: 10 individual larger sized Breasts 27 individual larger sized Legs 13 individual larger sized Thighs 31 individual larger sized Wings
Which can be coated with a recipe built upon a base of 200 grams of flour. (or 1-1/2 Metric Cups)

Typically the Coating represents 12% added to the chicken weight.

in personal experience we have weighted the chicken prior to dredging and after dredging plus weights after cooking
The increase in weight varied from 10% to 15%
The wings have more uneven texture and can retain more Seasoned flour also remember the Drumsticks are double dredged.

The amount of Sodium that KFC admits to for a leg is not much more than for a wing. This would seem to strongly imply that leg pieces are not being double coated.

Lets say that I cut up 2 x 2 Kg. Chickens, and discard the backs, and thereby wind up with about 3.6 Kg. of chicken that is cut into 16 pieces. 3.6 Kg. = 3,600 grams.
3,600 grams of chicken x 12.5% = 450 grams of seasoned coating required
But I'm coating ~16 mixed pieces (or 3.6 Kg.) with only about 245 grams of seasoned flour. Am I seriously under-coating my chicken pieces?
245/450 x 100 = 54.4%, or under-coating by ~45.6%.
Am I missing the ideal coating mark by that much?

The Wing by design and shape retain more seasoned flour then a Breast or keel ETC ETC
The Wing princely get more seasoned flour in valleys and clevis and equal to double dredged Drumsticks ?
