For the Anise enthusiasts, you have to try Anise Hyssop (Agastache anisata). This stuff smells stronger and more anisey than actual Anise seeds. Pretty impressive. Haven't cooked with it yet though.

Anise is one of the strongest flavours. I never would have thought that a leaf would outdo a seed. I thought the name would refer to traits of aniseyness. Didn't expect this pungency.

Remember the old days had more Leave and more Rubbed Herbs and Spices then what we know as Ground spices 2023 ERA.
It was easier to package the Leaves and the Herbs whole then Milled back in the 1930's
