The original Four that was use in Calgary, Alberta, Canada was a Soft Winter Wheat.
C.H.S. Did NOT send Wheat to Canada when the Second Franchise was Open In Canada after Leon Pete Harmon in Salt Lake City.
Calgary Alberta Canada was the 2nd Official Incorporated Franchise ON PAPER.
There were 3 or 4 Restaurant's PRIOR to Leon Pete Harmons who were cooking the Colonel's Fried Chicken PRIOR to Leon Peter Harmon jumped on Board.
The Original Original Flour in 1939 would have been much different then 20 years Later as the Original C.H.S. indicated was typically a 3 Blended Grain Flour or Soft Winter Wheat, Corn, and Barely. as that was WHAT WAS MILLED in the 1930's.
There is Article and Documents which Show and state as Time went ON C.H.S. had to Get the Flour companies to MIX the 3 style Blend of Flour for KFC as Many and ALL Flour companies mills were ONLY using STRAIGHT wheat after the WAR TIME. and 1950's
C.H.S. also requested Finer Flour then the Typical Mill was making in the 1950's BUT EVERY ONE must understand that By the 1950's Mills were incorporating Metal Milling equipment compared to the Stone Ground Milling from 1920' s
Making K.F.C. chicken WITH ANY FLOUR in 2023 YOU MUST sift the flour 3 times with small Hand sifters or mechanical sifter to Obtain a lighter fluffy Flour texture which is required.
We sift our Soft Winter Wheat First, then we add in Corn Flour and sift the second time, and then add Barely on the third sifting.
The we add salt and the seasoning and sift Two more times. with 1/2 of the Seasoning then the last 1/2 of seasoning is folding into the Lug which has been sifted many 5 times BY now.
the reason why we add the last 1/2 of seasoning is so larger rubbed Herbs are NOT pulverized.

The sifting more times Prior to using the Seasoned FLOUR coats the spices in a flour protective outer casing. IT helps maintain higher Flavor of Spices and Herbs and the Oils in the Ingredients when cooking
It will Help produce a Higher Aroma also when the Seasoning starts to release after the Initial 3 Minute Browning Time.
If you DO NOT sift the Flour Multiple times and coat the seasoning the OILS in the Herbs and Spices FLASH off and Aroma dissipates MUCH quicker.
