So currently I am working on recreating or trying to an early MK version. Which lists Red Pepper as an ingredient at what appears to be a higher weight. I am assuming that Red Pepper wasn't pure sweet paprika and that there was a level of heat to it. With the ratios I am putting together it is entirely possible the Red Pepper was as much as cayenne or that level of heat.
One possibility for 200g flour leads me to 9g combined B&W Pepper and .7g cayenne. Which I think would be reasonable heat wise.

I wish you could edit in this board or at least for an hour or so after you post. Grrrr! It should be 200g flour 4.5g B&W Pepper and .7g cayenne.
I am considering it could be 50% of H&S as B&W pepper.
Which would mean the 5% to flour ratio of H&S. Could be 2.5% B&W Pepper and 2.5% the other 9 ingredients. For my early Mk clone. As I do believe it only contained 11 total ingredients. The OR prior may have been 11 plus B&W Pepper (and salt).
Ratios for both style recipes could be different
