a question to the size difference in the K.F.C. Bags and why did they change ?
This is the answer We were Given when we had conversations with a Spice Company who Mixed spices for K.F.C. which we order Our spices from
the Bags which were lowest amount IE: contained Pure Spices and very little salt.
as time progressed and extracts were used and items were NOT the real Spices and Herbs increase amount was the Salt infused items
Celery, Garlic, Onion Salt instead of Celery Seed, Onion Powder, Garlic Powder?
any item mixed with Salt does NOT have to disclose the item added to Salt as the salt is usually mixed at a 3-1 Ratio 3 part Salt 1 Part Extract or item
If you cross reference some time frames K.F.C. also decreased the Salt Bag sizes in reference to the Spice Bags

I believe the current bag is 40 ounce. Was the very first bag 26 ounce, with no salt in the bag?

From Day 1 Salt was Never included in the Spices and Herbs it was always external.
Old Manuals tell us this and show amounts Old Photos and Current Videos show Salt bags.
C.H.S. Knew there was NO reason to SHIP extra weight in Seasoning Bags when Local suppliers could supply ESSENTIAL ITEMS.
C.H.S. specified the Type of Salt and Flour to be used
Anyone who has Experience with Spices and Herbs Blending Know there is a Benefit to add some Salt to Bags of ALL Spice and Herbs which is NOT floured size fine salt Helps as ANTI CLUMPING AGENT
HERE is a point MANY forget and Do Not understand the Original Spice and Herb bags as Viewed ON the Tennessee Ernie Show was NOT a DUMP 1 bag into the Flour like you see in the NEWER video's On line of last decades Prior to the 1970's Cooks Measured Spice to Flour weight amounts.
This was Pre-Manual Time and Portion Cups were use of measuring cups.

So originally it looked like this: 25 Lbs. of Cake Flour 3.75 Lbs. of Salt 1.625 Lbs. of bagged seasonings, including MSG, B&W Peppers, H&S, Garlic Powder, and "NO' Salt. Which scales down to: 200 grams Cake Flour 30 grams Salt 13 grams of bagged seasonings, including MSG, B&W Peppers, H&S, Garlic Powder, and "NO' Salt.
Or was this the way of things before both MSG and extracts?

Looking at the 13 grams before the era of both MSG and Extracts, this is a guess:
3.0 grams Black Pepper (1) 3.0 grams White Pepper (2) 1.5 grams Red Pepper (1 gram Sweet Paprika, 0.5 grams Cayenne Pepper) (3) 1.5 grams Coriander Seed (4) 1.0 grams Ginger (5) 1.0 grams Allspice (6) 0.75 grams Sage (7) 0.50 grams Anise Seed (8) 0.25 grams Thyme (9) 0.25 grams Marjoram) (10) 0.25 grams Garlic Powder (11)

Sums to 16 grams.
At this juncture the 26 ounce bag becomes a 32 ounce bag. Still with no Salt in the bag.

I forgot that the earliest recipes indicated Dextrose, so:
200. grams Cake Flour 30.0 grams Salt ------- Bag Is Below This Line ---------------- 3.00 grams MSG 0.375 gram Dextrose 3.00 grams Black Pepper (1) 3.00 grams White Pepper (2) 1.50 grams Red Pepper (1 gram Sweet Paprika, 0.5 grams Cayenne Pepper) (3) 1.50 grams Coriander Seed (4) 1.00 grams Ginger (5) 1.00 grams Allspice (6) 0.75 grams Sage (7) 0.50 grams Anise Seed (8) 0.125 grams Thyme (9) 0.125 grams Marjoram) (10) 0.125 grams Garlic Powder (11)
This solves the 'Thyme Overload' problem. As well as the 'Carvacrol Overload' problem.
