I have been asked over and over why would you measure spices to a 100Lbs weight Ratio.
I DO NOT KNOW
IT SERVES NO PURPOSE use 100Lbs as a factor
BUT 100Lbs can also represent Percentage %, Lbs., Oz, Gram, all scaled to 100 are the same value when 100 is used
so just forget the Lbs. and think about % Percentage
When C.H.S. and Leon Pete Harmon went to Leon's Family Grocery store in the 1950'S They Did NOT buy 100Lbs of Spices an Herbs
C.H.S ONLY bought 16 Spices and Herbs Tins and Frozen Chicken (Leon Pete Harmon Put the Bill for All items on his account and told CHS to get what everything He needs)
THEY DID NOT BUY 100Lbs of SPICE AND HERBS
so if you think the recipe can only be made while referencing 100Lbs. DO NOT BE FOOLED
Do You Think when C.H.S. was making the recipe in 1939 He was Measuring to 100Lbs NO HE WAS NOT.
Spice Tins in the 1930's were ONLY sold in Small Tins 2oz and 4oz and the Larger Tins, were 1lbs and 6lbs available more for commercial Cafeteria Style Cooking and Large
Cooking USE
C.H.S. Never measured the Spices and Herbs at a volume of 100Lbs until the late 1950's and Early 1960's NOT in 1939/1940
Scale your recipes to a 100g size Mix if your 11 Spices and Herbs go over 100g you screwed up your mixing portions
if you need more then 100g for cooking just Double the recipe or 1.5 the Recipe to 150g or 200g FOR HOME COOKING testing Batch's you Do not need MORE THEN 100g which is the size a small spice Bottle can hold in ANY STORE NOW.
If you want a comparison 100g would Never exceed 25 Tablespoons of Spices and Herbs EVER and that is being OVER estimating the 25 Tablespoon i', sure
in principle you should Not need more then 1 to 1.5oz of Spices and Herbs for 1lbs of Flour used NOT including Salt or M.S.G.
This should answer the Multiple Private questions I have been asked. ( I will Post a Detailed List and amounts of items used from the 1950's with full weights for items Flour, Salt, of Milk and Egg Powder and the Original size Bags that were use and Photo's to show example's)(First will be released on Saturday February 25th 2023) NOTE weights of measurement WILL NOT exceed 30Lbs for Seasoned Flour Mix
