By my reckoning 25 Lbs. of flour plus 3.75 Lbs. of Salt plus a bag of Seasoning Mix should coat about 900 mixed pieces of Chicken if there are zero losses and if there is zero clumping. If we knew how many pieces this blend actually coats (on average) within the Lug, we should be able to deduce the nominal percentage of coating that is lost.

And once we know the amount of coating that is lost, since we are given the amount of salt on each piece, we should be able to (among other things) compute how much Salt goes out to the trash with the lost coating mix, and then back calculate how much initial Salt must actually have been present.

Salt on each average piece * number of pieces actually coated by 1 lug * (lug net weight initial ÷ lug net weight trashed out) = starting amount of Salt

Canadian K.F.C. New Age use the Following Weights
I have sent you the Photo of the Canadian Items used in Private
8kg Flour 17.6 Lbs Flour 1.5kg 3.3 Lbs Seasoning 11 Herbs and Spices, Salt 200 G Milk and Egg Powder 21 Lbs plus 200g milk / Egg powder 21 / 3.3 Ratio Flour to Seasoning .15.5%
Approximately
21 Lbs. of Seasoned Flour can coat 224 pieces of chicken
or
10 pieces of chicken per 1 Lbs. of Flour Seasoning used on an average
if your Calculating Other counties weights which work on 28Lbs
and a 10 to a 10.5 Piece Coating per 1 Lbs.
28 x 10 = 280 Pieces 28 x 10.5 = 295 Pieces
I have printed in other Posting that the Average was 10% to 12% coating to Chicken adhesion by weight.
Keep in Mind continual Sifting of the Seasoned Flour is required and After 224 It was recommended to discard the Seasoned Flour and continual Change of the Milk Egg wash or Water Batch is required and recommended in OLD K.F.C. Manuals also ?
The Seasoned Flour Does Get moisture barriers after the Continual use of the Chicken which is folded into the Seasoned Flour

Things to think about is Weight of Chicken in the LUG not just the Piece Count ? 2Lbs to 2.5Lbs chickens 22.96 kg of Frozen chicken at 2.2Lbs x 22.96kg = 50Lbs of Chicken approximately 50Lbs of chicken coated in 21Lbs of Seasoned Flour Approximately Canadian Weights
