I was asked about the Pimento I speak about on the Forum in Private and thought it deserves a posting Thread. We use Pimento aka Allspice Jamaican from Cool Running which we obtain where ever we can get it and also Amazon. $10.00 Canadian Dollars a Container in the Whole Berry style as we Grind all our Spices In-House if we can. Much Higher Quality. Attached is a Stock Photo of the Cool Running Pimento Allspice Bottle (if you want I can Do Photo of the Containers we Have but Photo's May not be as clear ? The Cool Running Brand has more items and has been a Very reputable Brand and HIGH QUALITY Supplier for our needs Similar to Marshall creek which I promote for High Quality items. We Spend Mega Canadian Cash $ on Spices and Herbs and TEST Tons of NEW ITEMS weekly. In the Past I have sent small sample to People who have asked for samples of Items and Have NO issue doing this. I Did when Glen and Friends needed I&G which he mentioned Large Quality Order sent To Him a Small amount which I'm NOT sure he used as I Do Not recall the videos mentioning he used any? High Quality Spices once you find them are More expensive, BUT as I have shown with the Sage Leave save cost in the Long Run, But in the Big Picture they are more expensive. A Good Quality Pimento is from Jamaica because of the Growing method they use still which incorporated Hands on Growing and Picking with open air Drying. You Do see the difference in the Berries compared to others ? I Do Not think we can use other lower Quality items any Comment is open for discussing on Pimento, I will advise anyone to use what they have obviously for cost and use what you have. In the C.M.T video that Todd Wilbur has on K.F.C. his Grocery Store Till shown $200.00 for supplies to make K.F.C. (Yes had other staples more then Spices)

I also have Jamaican allspice, massive, massive difference to supermarket stuff. 100% allspice is in the recipe. Anyone who is serious about cracking the recipe should be using the highest quality spices they can get.

Allspice does not need to be in the recipe at all. IMHO, it is best replaced by a balanced combination of Nutmeg, Clove, Mace, and Cinnamon. Allspice delivers the essences of these spices, sans perhaps for Mace, but unfortunately not in the most ideal of ratios.
Edit: The above is not a declaration proclaiming that Allspice is not currently in the secret recipe. Nor is it a declaration that Allspice was always (going back to 1939) in the 'locked in' recipe. We simply don't know, because it's a secret.
Edit #2: My Recipe #17 (when some Cayenne is added) is said by some to be about as close as is necessary, and it contains zero Allspice.

There are two ways to Pluck a chicken ? Allspice plus Mace opens a door through which to jam in a couple additional ingredients when constrained to 11. But does it reliably deliver the full song "note"? And are the additional jammed in ingredients imperative.

Grace's recipe has only 8 H&S ingredients, including B&W Pepper. If Allspice was removed and Nutmeg, Clove, Mace, and Cinnamon were added, it would have 11 H&S ingredients.

I am a user of Allspice in my recipes. What I think is I’m fairly certain it is in the OR recipes from the mid 70’s that are derivatives of the work CHS did will Bill Summers on the MK product. So that includes for me, Grace’s, Shelton’s and the Canadian franchises using the MK chicken seasoning. Kind of hard to ignore from this era.
From the 1939 version through sale of the Corp and the corporate OR in the mid 70’s A lot harder to say. 11 H&S on top of Salt and pepper gives the space for 3 ingredient vs 1 or 2. When Bill got involved it appears the amount of ingredients may have been condensed to fit everything but salt and msg in the 11. Quite possible when Allspice and Coriander where added eliminating 2 or 3 other ingredients.

Interestingly enough, and if I'm recalling correctly, 'Final Answer Oct.3 2022' has no Mace or Nutmeg. I'm going to have to revisit it. Perhaps the case is that my Allspice is not top shelf. It is ground, and it is aging. At this juncture I'd have to say over 2 years old. Perhaps deepfriednew101 is truly onto something here. I'll have to see if I can purchase 'Cool Running' Pimento (Whole) in the USA.
